Spicy Pimiento Cheese
You can literally have this dairy free spicy pimiento cheese with five minutes prep time. It always takes me longer to clean and chop veggies to serve with this delicious retro dip.
We love to give this pimiento cheese some smoky flavor with smoked paprika, and spice it up a bit with a squeeze of sriracha and some tart pickled jalapeños. The basic recipe remains the same, although you can play with the quantities there too, for a chunkier or creamy version. I make this so often, I generally just add things and stir until it reaches the consistency I am after.
How to serve
This dairy free spicy pimiento cheese is the star of your snack board! I serve it in cute little jars and surround those with veggies, fruits, crackers and nuts.
We love to use pimiento cheese as a spread for sandwiches and wraps. Thin it out with a bit of water for a zesty salad dressing - I literally put a spoonful in a salad bowl, add water, whisk, and add salad greens to that bowl. Toss and you have a super flavorful salad!
The first time I made this, I served it with mini spinach blini made from our spinach pancake recipe.
How long does pimiento cheese last?
If this is not made for a party (where it will quickly disappear), my rule for the best flavor and freshness is to use within 3 days.
Store pimiento cheese in the refrigerator in a container with an airtight lid.
