These taste like light fluffy cheese crackers, and are great warm or cold. The olive bites are salty and uniquely tasty; I have made these ahead of time and warmed in the oven prior to serving.

Tips to making olive cheese bites
- Wrap the cheese dough completely around the olive to make a cheese ball, or form the dough into a cup, with the top of the olive showing, and bake them in a mini muffin pan. This is how I usually make them, so it is easy to see what is inside.
- The thickness of the cheese dough is up to you; I like just enough dough to wrap around the olive but not so much that the olive bites become dry.
- Grate the cheese yourself, if you can find a good dairy free block cheese. In all the times I have made these olive bites, I grate my own cheese, or even slice up a block of dairy free cheese slices.
- Use a dairy free stick butter. Sticks have a lower water content than the butter in a tub, and are better for this recipe and most baking recipes.
- Use your favorite olive! When I first made these, I used a pimiento stuffed martini olive, which is always a good choice. Over the years, I have used kalamata, garlic stuffed green olives, and our favorite rich buttery olive, the castelvetrano.
Half recipe: olive cheese bites
If you want to make a smaller amount of dairy free olive cheese bites, here are the measurements for a half recipe:
- 4 ounces dairy free cheese
- ½ stick butter
- ½ cup + 2 tablespoons gluten free all purpose flour
- 15 olives
I actually suggest making a double batch instead of half, but that's just me.
How long does this recipe last?
My rule for maximum flavor and freshness is to enjoy this recipe within three days.
Refrigerate any leftovers. Wait until it is cooled completely, and refrigerate in a glass container with a tightly fitting lid.
Reheating methods
- Oven: Arrange on a parchment lined baking sheet and bake at 400° F until warmed through, 8-10 minutes.
- Air Fryer: Air fry at 390 °F and check after 5 minutes. Shake basket and continue heating for another couple minutes as needed.

Dairy Free Olive Cheese Bites
A flavorful bite for any party! Bright and briny olives wrapped in a dairy free cheese dough make a great one bite appetizer.
Ingredients
- 8 ounces dairy free cheese, grated (see notes)
- 1 stick dairy free butter, sliced (see notes)
- 1 ¼ cup gluten free all purpose flour
- 30 olives, choose your favorite or an assortment
Instructions
- Preheat oven to 400 °F.
- Add grated cheese, butter, and flour to a wide blender jar or bowl of a food processor. Pulse / blend this mixture, it quickly forms into a dough ball. Remove from food processor and knead dough a few times until smooth.
- Roll cheese dough into one inch balls. Make a well in the middle of the dough ball and place an olive inside. Place olive cheese bite in cup of mini muffin pan.
- Alternatively, you can form dough completely closed around the olive and bake. I like to see the top of the olive - it looks nice and shows what is inside.
- Bake olive cheese bites at 400 °F for 22-25 minutes. Remove from oven and allow to cool a bit to set.
