Why everyone loves pinwheels
Veggie pinwheels bring all of the nostalgia. Like English muffin pizzas and wiener wraps, a tortilla roll up is firmly imprinted in my grade school memory. I had roll ups in my Snoopy lunch box when I was young, and I rolled them myself for an after school snack later in school.
Tortilla pinwheels are a fantastic lunch option, and are a kid friendly recipe. They can even help assemble them.
Make these roll ups to take to your next BBQ, enjoy with your game day eats, or roll some up for a tasty lunch or dinner.

Tips for making veggie pinwheels
Follow these tips for quick and easy assembly. The most difficult part is waiting for the roll ups to chill...
- Chop / mince all veggies / filling very small.
- Pat dry / squeeze veggies with a higher water content to avoid soggy pinwheels.
- Warm tortillas (stovetop or microwave) to make them more pliable, especially if previously refrigerated.
- Spread the cream cheese / hummus to the edge of the tortilla, but:
- Arrange the fillings in an even layer, leaving at least a ½ inch edge.
- Refrigerate before slicing. The longer pinwheels are refrigerated, the easier they are to slice.
- Use a sharp serrated knife to slice the tortilla roll ups.
- Make ahead recipe! Pinwheels can be made the day before; roll, wrap, and refrigerate. Slice before serving.
Variations on this recipe / Ingredient substitutions

- Jalapeno Popper: Mix finely diced fresh jalapeños and grated cheddar into the cream cheese before spreading.
- Taco: Stir some taco seasoning into the cream cheese, and fill with chopped beans, corn, tomato.

- Super veggie: Spread with hummus instead of cream cheese, and fill with spinach, carrots, bell peppers, fresh herbs.

- Soy free vegan cream cheese in place of hummus
- Sliced olives
- Cucumbers
- Marinated artichoke hearts
- Red bell pepper
- Spinach
- Chives / fresh herbs
How long do tortilla roll ups last?
My rule for maximum flavor and freshness is to enjoy these pinwheels within three days.
Store in a glass container with a tightly fitting lid and refrigerate.
