Gluten Free Cranberry Lemon Muffins
Juicy tart cranberries and bright lemon make these your favorite winter time muffin.
Ingredients
- 1 cup fine almond flour
- 1 cup gluten free all purpose flour
- ½ cup gluten free oat flour
- 1 tablespoon baking powder
- ¼ teaspoon sea salt
- ¼ teaspoon baking soda
- ¾ cup dairy free milk
- ¼ cup organic vegetable oil (or your favorite neutral oil)
- ¾ cup maple syrup
- 1 tablespoon pure vanilla extract
- Juice + zest of two lemons
- 1 cup fresh cranberries
- ½ cup toasted sliced almonds
Instructions
- Preheat oven to 375° F. Line a muffin tin with paper liners.
- In a large bowl, sift together the almond flour, all purpose flour, oat flour, baking powder, sea salt, and baking soda.
- To the dry ingredients, add the milk, oil, maple syrup, and vanilla extract. Stir until no dry flour remains.
- Fold in in the lemon juice and zest, cranberries, and sliced almonds.
- Divide the batter evenly between 12 muffin cups.
- Transfer to the oven and bake at 375° F for 20-25 minutes until a toothpick inserted into the center comes out clean.
- Let cool at room temperature for 20 minutes before serving or storing.
