Tropical Yogurt Fruit Crunch Smoothie – this bright and vibrant smoothie is quick and easy, with creamy and crunchy textures! perfect breakfast or snack!
As I write this, I am bundled up in a blanket with a Long Dog Heater.
I have been drinking tropical smoothies while browsing hotels in Waikiki and Maui. Over the next couple months, you will grow tired of hearing me exclaim with glee that days are lasting longer and getting warmer. I love our daylight ’til nine summer evenings…
Right now, however, it is still cold. So I rely on dachshunds and running around the tennis court to keep me warm.
One of my favorite pre work out snacks is a dried apricot. or five. Lately, I have been enjoying handfuls of freeze dried fruit before workouts too… and adding them to oatmeal and smoothies. I love the texture contrast and the super concentrated, flavor packed antioxidant boost. I like to think the nutrients and natural sugars give me an energy boost, too.
The other fun thing about this smoothie is the new vegan yogurt I used! So Delicious has a brand new recipe for their coconut based yogurt alternatives that are carrageenan free and soy free. They are great on their own, and I love adding them to smoothies for an extra ooompf.
Tropical Yogurt Fruit Crunch Smoothie
YIELD: 1 smoothie
dairy, egg, soy and gluten free, vegan
1 (5.3 ounce) container So Delicious Strawberry Banana Yogurt Alternative
3/4 cup cashew milk (So Delicious)
1/2 cup frozen pineapple
1/4 cup dried apricot
1 tablespoon chia seeds
handful Crunchies Freeze Dried Strawberry Banana
coconut whip (optional topping)
Combine yogurt, milk, pineapple, apricot, and chia in blender. Blend at high speed until smooth (less than one minute).
Pour into serving glass, top with Crunchies.
