BBQ jackfruit taquitos dipped into cool, refreshing cucumber ranch dressing is a multi layered flavor event. So crispy and juicy, you will crave taquitos weekly.
Pulled jackfruit is one of my favorite alternatives for meat. Jackfruit takes on the flavors you pair it with, and when shredded it has the texture of pulled pork or chicken.

Crispy taquitos
BBQ jackfruit taquitos don't need to be fried in oil to get that perfectly crispy shell. These taquitos can be baked or air fried, and this recipe has instructions for both.
If baking, arrange taquitos seam side down on a parchment lined baking sheet, leaving room between each taquito. If you are using your air fryer, line the basket with a perforated parchment round for easy clean up. See the recipe for detailed temperatures and cooking times.

This two minute ranch dressing recipe is super easy: simply peel and dice a cucumber (my favorite cucumbers are the seedless variety) and blend it with the ingredients for this dairy free ranch dressing recipe.

Make the jackfruit filling ahead of time and refrigerate in a container with a tightly fitting lid. I prep the filling in advance, and only roll the taquitos when we will be eating them. If there are leftovers, a quick air fry will crisp them up again.

BBQ Jackfruit Taquitos
Crispy taquitos combine fresh veggies and shredded jackfruit for great flavor and texture.
Ingredients
Cucumber Ranch Dressing
- 1 English cucumber, peeled and chopped
- 1 batch Celery Ranch Dressing
Jackfruit Taquitos
- 2 (14-oz) cans jackfruit
- ¾ cup Easy Gluten Free BBQ sauce
- 1 cup dairy free cheese, Mexican style
- ½ cup frozen fire-roasted corn
- ½ green bell pepper, minced
- ½ onion, minced
- 1 jalapeño, minced
- 10 corn tortillas, warmed over open flame or in skillet
Instructions
- Make the cucumber ranch dressing and set aside.
- If baking the taquitos, preheat the oven to 425° F. Line a baking sheet with parchment and set aside.
- If air frying the taquitos, have your air fryer ready and line with a parchment round if you like.
- Drain jack fruit, place in large mixing bowl. Using two forks, shred jack fruit into smaller pieces (or chop with knife).
- Add to the jackfruit: BBQ sauce, shredded cheese, corn, bell pepper, onion, and jalapeño. Mix well with tongs or forks.
- Divide the mixture and the cheese among the warmed tortillas.
- Baked taquitos: Roll up the taquitos and place seam side down on a baking sheet, leaving room between each taquito. Bake for 30 minutes, turning the pan halfway through for evenness. Serve immediately.
- Air fried taquitos: Roll up the taquitos and place seam side down, in a single layer in the air fryer basket, leaving room between each taquito. Air fry at 390 for 5-7 minutes, or until crispy.
Notes
Thicker ranch dressing:
If you prefer a thicker ranch dressing / dip, add a couple spoonfuls of dairy free Greek style yogurt or sour cream. I love a thin ranch dressing, and the blended cucumbers definitely thin this recipe even more!
