Spicy Pimiento Cheese
You can literally have this dairy free spicy pimiento cheese with five minutes prep time. It always takes me longer to clean and chop veggies to serve with this delicious retro dip.
We love to give this pimiento cheese some smoky flavor with smoked paprika, and spice it up a bit with a squeeze of sriracha and some tart pickled jalapeΓ±os. The basic recipe remains the same, although you can play with the quantities there too, for a chunkier or creamy version. I make this so often, I generally just add things and stir until it reaches the consistency I am after.
How to serve
This dairy free spicy pimiento cheese is the star of your snack board! I serve it in cute little jars and surround those with veggies, fruits, crackers and nuts.
We love to use pimiento cheese as a spread for sandwiches and wraps. Thin it out with a bit of water for a zesty salad dressing - I literally put a spoonful in a salad bowl, add water, whisk, and add salad greens to that bowl. Toss and you have a super flavorful salad!
The first time I made this, I served it with mini spinach blini made from our spinach pancake recipe.
How long does pimiento cheese last?
If this is not made for a party (where it will quickly disappear), my rule for the best flavor and freshness is to use within 3 days.
Store pimiento cheese in the refrigerator in a container with an airtight lid.

I love the bright green color of those blinis! Could I use frozen spinach instead of fresh?
Fun fact: I'm a huge karaoke fan and even sang βYouβre So Vainβ by Carly Simon at my own wedding! Oh, and instead of a dance, my husband and I opened the night with 'I was made for loving you' by KISS. We had a blast, obviously. π
spabettie says
I have never tried frozen spinach, but I bet it would work? the amount might be different, just eyeball until you get to a normal pancake consistency? (and let me know if it works!).
I LOVE that you sang karaoke at your wedding - and especially Carly!! and KISS. you are awesome.
Kristy Lynn @ Gastronomical Sovereignty says
interesting! I've never heard of a blini before - these may come in handy for my christmas potluck i do every year.... karaoke is also a good idea.
ps. also agree with eden - these photos are rad! so many blog posts re food tip toe around pastels.. while they're certainly pretty, they all look kind of the same. These are edgy!
spabettie says
thank you - I love the bright in these photos too! edgy - I'll take it! π a blini would be great for a holiday potluck - hmm - with maybe something RED - like a roasted pepper something - for festive colors.
Pure2raw Twins says

Is it ok if I invite myself to your party!?! I like singing Waterfalls by TLC. Or Ice Ice Baby.
spabettie says
YES!! I LOVE Waterfalls! I don't know if I've ever sang Ice Ice Baby... I have sang Whip It before - in a bar - I do not recommend it! (not a good singing song!). we redeemed ourselves by singing Do Re Me after - the whole bar LOVED that one and sang along! π

What a fun, creative appetizer! You never fail to impress! As for Karaoke, if I'm on the West Coast in the near future and I find out you are having a Karaoke Party I am totally crashing it! π And I plan to make you sing Journey's "Don't Stop Believing" with me. After I eat all your appetizers. π
spabettie says
haa haa, I would hope you would crash! π I'll totally sing Journey and then a bunch of other songs too! π yes, before during and after appetizers.
Nichole says
The colors are amazing. Very, very festive.
Karaoke!? Save me a song. That's awesome:)
spabettie says
thank you! and yes, karaoke will be here. waiting. π
Eden says
Ugh! Yet again I'm the last commenter. Boo.
Wow, this post is like a gay pride parade (simply cause of the colors, not because its full of Cher or feather boas).
And seriously dude, teach me your lighting tricks! Your lighting is always flawless!
spabettie says
okay Eden, this comment makes me want to make you one of those rainbow cakes - every layer a different color? perhaps for next year's Gay Pride Week. π
funny you say that about THIS photo - it is perpetually dark in Portland now, and I thought the light SUCKED in these photos! I couldn't do anything to make it look good, and I do not want to get an editing program (silly, right?).
what kind of camera do you use?
Eden says
Nikon D3100
spabettie says
oooh, okay! tonight Jason and I are drinking wine and laughing at the infomercial for "Easy 80's" music cd set, but later I will look up that model and try to help you with settings? π
Krista {Budget Gourmet Mom} says
With 4 little kids at home it's been forever since I had an appetizer party. The colors you paired look so inviting and delicious! I'm sure my kids would have a blast with your karaoke and the snacks. They dig any food they can eat with their fingers (so do I)!
spabettie says
aw, Krista! I wish I could have y'all over, we have enough songs for the kids to sing, and I would make you some yummy treats! π
Sarena (The Non-Dairy Queen) says
I hate it, but I love watching others! I always sing Cindi Lauper when I have to do it though. I want to come to one of your parties! Fun music and amazing eats sounds like a great party to me!
spabettie says
some day, Sarena!! I was saying this to Lindsay + Heather earlier - we will all get together someday!! π
Sarena (The Non-Dairy Queen) says
I completely agree! We will have to make that happen! Maybe meet in the middle somewhere?
spabettie says
that would be so awesome.
