Vegan holiday rice crispies are sweet and salty and full of festive color! cranberry pistachio rice crispies for your holiday party or cookie tray.

Holiday flavors in a classic dessert

These vegan holiday rice crispies are not a surprise – I will take any chance I get to make a holiday themed crispy treat. I love the sweet and salty combination with these gooey treats, and the tart cranberry adds another layer of holiday flavor to that.

Slice these into squares or roll into balls and add them to your holiday cookie trays – they are always a welcome treat!

How to make this recipe

Making cranberry pistachio rice crispy treats is just as easy as the traditional. You need:

  • melted butter
  • marshmallows
  • puffed rice cereal

We love Earth Balance or homemade butter, Dandies marshmallows, and just about any plain gluten free rice cereal. 

You can also get super colorful and make Trix Rice Crispies.

Tips to make this recipe

My tips for making vegan holiday rice crispies:

  • Wet your hands to press the crispies into the pan – they won’t stick!
  • Be patient when melting vegan marshmallows – they take longer, but they DO melt.
  • Make these in a 8 or 9 inch square pan for a TALL rice crispy treat.

Holiday Rice Crispy Treats

Holiday Rice Crispy Treats

these holiday rice crispy treats get a sweet, salty, and tart update. sweet marshmallow treats dotted with colorful jewels.

Prep Time 3 minutes
Cook Time 5 minutes
Total Time 8 minutes

Ingredients

  • 2 tablespoons vegan butter or coconut oil
  • 10 oz package vegan marshmallows
  • 3 cups rice puffed cereal *see note
  • 1/2 cup shelled pistachios
  • 1/3 cup dried cranberries

Instructions

  1. Line a 9x9 square baking dish with parchment. Set aside.
  2. Melt vegan butter / coconut oil in saucepan over low heat.
  3. Add vegan marshmallows. Stir over low heat until melted.
  4. Remove from heat. Add rice puffed cereal, pistachios, and dried cranberries. Stir until combined.
  5. Wet hands to keep from sticking. Press rice crispies into prepared pan. Allow to 'set' (1+ hour) before removing from pan and slicing.
