This collection of recipes highlight the rich warm flavors of vanilla in wonderful presentations of desserts, snacks, dips and smoothies.
Vanilla extract vs vanilla paste
Pure vanilla extract and vanilla bean paste both add delicious vanilla flavor to our recipes. Vanilla extract and paste are similar in strength, and I use them interchangeably in recipes. Here are some differences I have noted with use.
Vanilla bean paste has a gel consistency and seems deeper, richer in flavor. You can see the specks of vanilla, which I love. While pure vanilla extract is not clear in color, it leaves no visible trace of the vanilla bean.
Vanilla paste is my go to when I do not have any actual vanilla bean on hand but want that speckled vanilla to show in my recipe.
Vanilla powder is similar to vanilla bean paste in that the flavor is bolder and richer than a pure vanilla extract liquid. I suspect this is due to the liquid being alcohol based, which can evaporate and decrease the flavors.
I love adding vanilla powder directly to the dry ingredients in baking, and mixing it with coarse sugar for an easy vanilla sugar that is great for dusting and finishing.

Thank you for telling us the difference between the paste and extract. This was the best description (and picture) I found online. I too add double the vanilla extract. Maybe I need to scrape some seeds into my cookies too.

Hello, my name is Linda, and I am a vanilla-holic. I am so bad that I even go to Juarez to get my fix. I usually triple vanilla in my baking. I have used vanilla powder, but I had never heard of vanilla paste, until now. Will definately have to try it!
