Sparkly cookies
These sparkly apricot rosemary thumbprint cookies are literally the shiny star of a holiday cookie tray! They are super easy to make, and always one of the most asked for treats during our holiday season.
These brightly flavored jewels are always included in our holiday cookie trays and boxes.
Topping variations
One variation for this recipe is the flavor of jam. Obviously you can use whatever fruit you prefer, or use chocolate or caramel instead! Melt the chocolate or caramel and add to the thumbprint after baking the cookie, or push a piece of chocolate or caramel into the thumbprint before baking.
How long do these cookies last?
These cookies are soft, and need to be cooled completely before eating and storing. These keep at room temperature for 3 days in a glass container with a lid, or for a week in the refrigerator.

Apricot Rosemary Thumbprint Cookies
These sparkly jewels are the best holiday cookie - a buttery cookie topped with a bright punch of flavor and festive sparkle.
Ingredients
- ½ cup dairy free butter
- 2 tablespoons vegan granulated sugar
- 1 teaspoon pure vanilla extract or paste
- 1 ½ cups gluten free all purpose flour
- 2 tablespoons dairy free milk
- 1 sprig (½ teaspoon) fresh rosemary, stemmed and finely chopped
- ¼ cup apricot preserves
- colored sanding sugar (optional)
Instructions
- Preheat oven to 325 °F. Line a baking sheet with parchment.
- In a mixing bowl, cream together butter, sugar, and vanilla.
- Sift in flour and stir to combine, adding milk one tablespoon at a time until dough forms.
- Add chopped rosemary to the dough if using, folding to combine throughout dough.
- Scoop a tablespoon of dough, roll with hands into a ball.
- Place on prepared (parchment) baking sheet, make a thumbprint. Spoon apricot preserves into thumbprint, sprinkle with sparkly colored sugars.
- Bake at 325 °F for 15 minutes.
- Remove from oven. Allow to cool a bit before carefully moving to cooling rack.
- Cool completely to avoid crumbling - they firm up as they cool.

Thanks Kristina for the "post-shout-out", it also brought me to your blog ~ nice. They say the best thing to do in life is what you enjoy, and it appears you're doing something you truly enjoy...and by judging from all your snapshots of foodie creations, you're really good at it.
When you start racing cars though, I'd recommend letting someone else take those pictures. Keep those hands at 10 and 2, and push the accelerator through the floor.
