Anyone celebrating? You have a whole month...
You may know I have a thing for sandwiches. Like, I make one, then become obsessed with the flavors and that is all I eat for several days in a row. Sometimes for lunch and dinner.
Flavorful veggie grilled cheese sandwich
I made this salt and vinegar grilled cheese for our lunch last Saturday. Then I woke up early Sunday and made another one for breakfast.
I may be thinking about them again this week...
Thing is, these are kinda sorta healthy, right? Big juicy slices of tomato and thick slabs of cool avocado combine with two kinds of cheese and salt & vinegar potato chips.
Yep. Potato chips.

Salt and Vinegar Grilled Cheese
Salt and Vinegar Grilled Cheese – a veggie stacked sandwich packed with incredible layers of flavor and texture.
Ingredients
- 1 teaspoon dairy free butter or olive oil
- 2 slices gluten free bread
- 3 ounces dairy free cheese
- 1 Roma tomato, sliced into four thick slices
- ½ avocado, sliced into four thick slices
- handful of salt & vinegar chips
Instructions
- In a skillet or griddle over medium heat, melt butter / oil.
- Arrange cheese in slices equally between the two slices of bread. Place each slice open faced on skillet in melted butter / oil. Cover to melt cheese as bread cooks up grilled and crispy.
- Remove from heat. Arrange potato chips in layer over cheese, top with avocado and tomato. Press together in a sandwich.

OMG - salt and vinegar are my favs too! And I grew up putting chips in my sandwiches! Love it! I have recently gotten over an addiction to the salt and black pepper chips. It was easy - but had to be done!

Chips in sandwiches are the best thing ever! And s&v chips are my fave. And grilled cheese is my fave. So together? Seriously, as if all of your posts don't make me drool. Had NO idea it was grilled cheese month--and I've already missed half of it without a single sandwich in site! 2. Where I live, it's grilled cheese month 12 months a year.
3. Salt and vinegar chips inside???? This reminds me of my favorite indulgence from when I was younger--bologna sandwich with mayo and sour cream and onion chips. This looks about a million times better though.

here too - grilled cheese ALL the time! and oooh, you just took me back to childhood - VERY rare treat was a fried bologna sandwich... melted cheddar over warm bologna, mayo and crisp lettuce on soft white bread. WOW that was good. 🙂
