Happy Holidays from our extended vacation.
Last week Jason and I were in Pasadena for the Engine 2 - 2 Forks Conference. I'll tell you more about all that fun soon - I may have won a raffle item that will be a giveaway soon.
We flew in early the week before and had a little warm weather vacation - the day we flew out of Portland it was raining so hard I couldn't see straight, and the wind was recorded at 105mph. We landed in L.A. to a sunny 78 degrees - ah, nice.
We had two extra plane tickets that we had to use, so we extended our stay... forgoing the holiday at home. With the change in travel plans, we had enjoyed the Friendsgiving the week before we left, which gave us the ingredients for this Epic Day After Holiday Sandwich.
While I love all the holiday foods, I equally love the day after. You know, cranberry sauce and pie for breakfast, and sandwiches. Epic sandwiches.

Top this Epic Day After Holiday Sandwich with a generous pour of warm Shiitake Gravy...
Epic Day After Holiday Sandwich
YIELD: one sandwich
INGREDIENTS:
2 slices bread (your favorite)
2 tablespoons Tangy Cheese Sauce
several large kale leaves
¼ cup Roasted Garlic Mashed Potatoes
3 tablespoons Ginger Cranberry Sauce
1 inch slice Gardein Holiday Roast (or Crispy Tofu for gluten free)
more kale leaves
Savory Shiitake Rosemary Gravy
INSTRUCTIONS:
Spread one slice of bread with Tangy Cheese Sauce, then add several kale leaves.
Top the kale with warm mashed potatoes, followed by the Ginger Cranberry Sauce. Place a warm slice of Holiday Roast next, then add more kale and the top piece of bread.
Finish with a generous pour of warm Savory Shiitake Rosemary Gravy.
