These maple mustard roasted cabbage steaks are a flavorful side or main dish for your holiday table or dinner any time.
Rip Esselstyn once said that most people generally have 8 - 10 dinners they routinely rotate through most of the time. Even fewer for breakfasts and lunch.
Once I actively started cooking plant based, I became much more creative in the kitchen. I think about ingredients more, and as long time readers know, I love unique pairings and bold flavors.
These cabbage steaks fall into that category. On the unique side, but one that surprises people - everyone loves these!
- Honestly, something magical happens when you roast cabbage. The caramelization adds incredible flavor to this underrated leafy vegetable, and cabbage made this way needs very little to be delicious.
- These cabbage steaks are soft, but not too soft - they still have a bit of a crunchy bite. The crispy caramelized edges are just delicious.

Reheating methods
- Oven: Arrange cabbage steaks on a parchment lined baking sheet and bake at 375° F until warmed through, carefully flipping to the other side after 6-7 minutes.
- Stovetop: Reheat on the stovetop in a skillet over medium heat.
- Air Fryer: Air fry at 350 °F and check after 5 minutes. Carefully turn cabbage and continue heating for another couple minutes as needed.

Maple Mustard Cabbage Steaks
Deliciously crispy and caramelized, cabbage steaks have incredible flavor and wow factor.
Ingredients
Cabbage Steaks
- 1 large head cabbage, cleaned and cut into 2 inch steaks
- cooked quinoa or other grain, for serving
Maple Mustard Sauce
- 3 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 2 cloves garlic, pressed
- ¼ teaspoon cayenne pepper
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Toppings
- ⅓ cup gluten free breadcrumbs
- 1 teaspoon olive oil
- ½ teaspoon garlic salt
- ¼ cup pecan pieces
- 2 tablespoons minced fresh flat-leaf parsley
- sea salt flakes
Instructions
- Preheat oven to 450° F.
- Cook quinoa (see these instructions).
- Slice the cabbage into 2 inch steaks.
- Place the cabbage steaks on a baking sheet, set aside.
- In a small bowl, whisk together the oil, mustard, maple syrup, garlic, cayenne, salt, and pepper. Set aside.
- Using a basting brush, brush each side of the cabbage liberally with the mustard mixture.
- Transfer to the oven and bake for 25 minutes. Top with breadcrumb mixture and broil for 3-4 minutes until the breadcrumbs are golden.
- Serve immediately over quinoa or other grain. See notes for options.
