It has been cold here in Oregon, with both snow and ice in the last few days. Luckily not enough snow to shut down the city, but in the higher elevations where we are… 😀
I found myself craving some comfort food in pasta form, but also something light and fresh.
Also? I bought some extremely expensive out of season basil and would not let it wilt. I miss the summertime basil in my yard…
Prepare pasta as directed. While pasta is cooking, sauté garlic and romas in olive oil. When tomatoes soften (just a few minutes), toss with fresh pasta, basil and most of the parmesan.
Plate and top with remaining parmesan.
I served this alongside broccolini that was sautéed with garlic.
Is it snowing where you are?
I am guessing that will be a yes, unless you are in the one state without snow…
