Gluten Free Vegan Quesadilla
Ever have that UH OH I AM SO HUNGRY AND NEED FOOD QUICK feeling? What's that? All the time? Yeah, me too. Working from home is a blessing in so many ways, and that means my time is my own and I often get into a groove and wait too long to eat. Oops.
We want quick, easy, and satisfying. That's where this pizza quesadilla comes in. It's the perfect combination of a veggie packed meal and kid friendly favorite.
This pizza quesadilla is versatile - load it up with your favorite vegetables and dairy free cheese.
This has all the delicious taste of your favorite homemade pizza recipe in minutes.
How To Make Pizza Quesadillas
Quesadillas are so easy to assemble! Tips for the best quesadillas:
- Sauté or steam vegetables if you prefer cooked over raw.
- Add pizza sauce to one tortilla, then add cheese and all ingredients.
- Don't add too much! Just enough for a deliciously messy quesadilla.
- Add a bit more cheese - this seals everything in.
- Heat your skillet over medium heat.
- I cook quesadillas directly on a clean skillet, no oil needed.
- Carefully place the quesadilla in the skillet over medium heat. Cook for three to five minutes on each side.
- Quesadillas are done when the tortillas are golden brown and the cheese is melting out the sides...
- Remove the quesadilla from the pan. Cool and 'set' for several minutes before cutting.
- Slice into wedges and enjoy!
Can quesadillas be gluten free?
Absolutely, yes! Gluten free tortillas have gotten better in the last couple years, as far as flexibility and not just cracking in half. A gluten free quesadilla is easier, though - you want the tortilla to crisp up, and it's not really necessary to have a soft, flexible tortilla.
Our current favorite gluten free vegan tortilla for quesadillas is the Siete tortillas. I love the almond flour ones, but they also have chickpea, cassava, and cashew, they are all great.
Our favorite gluten free vegan tortillas that are a little more flexible - for burrito and enchilada rolling - are the good old Mission tortillas. The spinach or the plain, both good.
How To Serve Quesadillas
What should I dip this in?
Dipping your pizza quesadilla is half the fun of making them.
We serve this with a bowl of pizza sauce for dipping. Other options for a more traditional (taco style?) quesadilla would be a vegan sour cream, ranch dressing, or even cheese sauce. Or, you can eat it as is. If you'd like a creamy cool dip, use our Spicy Guacamole - trust me, that's a great combination.
What can I serve with a quesadilla?
I love a fresh garden salad or vegetables alongside a quesadilla. Some roasted or pan fried (or even raw!) broccoli is my first choice, almost always.
For dessert? A bowl of rich chocolate Oat Milk Ice Cream is a perfect finish.

Ingredients
- 2 gluten free tortillas
- 4-5 crimini mushrooms, sliced
- 3-4 tablespoons pizza sauce / marinara
- 1-2 ounces dairy free cheese
- ½ teaspoon pizza seasoning
Instructions
- Prep (peel / chop) vegetables.
- Sauté vegetables if you prefer cooked over raw. Set aside.
- Spread pizza sauce on one tortilla, then add cheese and all vegetables in an even layer over entire surface of tortilla.
- Add a bit more cheese - this seals everything in.
- Use the same skillet that sautéed vegetables. Heat over medium heat.
- Cook quesadillas directly on a clean skillet, no oil needed.
- Carefully place the quesadilla in the skillet over medium heat. Cook for three to five minutes on each side.
- Quesadillas are done when the tortillas are golden brown and the cheese is melted.
- Remove the quesadilla from the pan. Cool and 'set' for several minutes before cutting.
