Broccoli Salad Recipe
I am sharing an all time favorite side dish. Are you eye rolling - I realize I say nearly everything is my favorite. I really do mean it each time I say it?
This quick and easy, 6 ingredient recipe has fantastic crunch and crowd pleasing flavor. It is a year round staple in our house, and is a recipe that anyone can make and everyone loves.
The next time you’re craving great flavor and freshness, or need a dish for a potluck, make this Sesame Broccoli Salad. It’s a crunchy, healthy, and super tasty dish you will crave.
How To Blanch Broccoli
Blanching vegetables is a quick cooking method that retains nutrients. A quick blanch in boiling water also softens the broccoli just a bit, and brightens the green color. While I personally love raw broccoli salads, I know some do not. Blanched broccoli still has a crunchy snap, just a bit softer.
Blanching broccoli could not be easier, and takes only a couple steps:
- Have an ice bath ready
- Bring water to boil
- Boil broccoli for a short time
- Drain broccoli
- Plunge into ice bath to stop cooking
Meal prep broccoli salad recipe
This is definitely a favorite meal prep recipe I make for the week. I’ll make a double batch and I enjoy broccoli salad with lunches and dinner sides.
My rule of leftovers is 3-4 days for maximum flavor and freshness. This recipe will last a week in the fridge, in a container with a sealing lid.

Sesame Broccoli Salad

Ingredients
- 1 pound broccoli (4 small heads)
- 1 large carrot, stemmed and peeled
- ¼ cup cashew cream (or vegan mayonnaise)
- 2 tablespoons plain plant milk (almond, oat)
- 1-2 tablespoons toasted sesame oil
- 1 tablespoon maple syrup
- ½ teaspoon salt
Instructions
- Remove the broccoli stalks (save for juicing / smoothies). Chop broccoli into small trees / bite size pieces.
- Grate carrot. Set aside.
- Blanch the broccoli:
- Add broccoli to large pot. Add enough water to cover broccoli. Over high heat, bring water to a boil. Using tongs or a fork, make sure broccoli is completely submerged in boiling water.
- While you wait for the broccoli to come to a boil, fill a large bowl with ice. Add cold water to the ice. This is the ice bath for the broccoli.
- Remove broccoli after one minute of boiling. Carefully drain broccoli, and transfer immediately to ice bath to stop cooking.
- Once broccoli is cool, drain from ice bath and pat dry. Set aside.
- In a large mixing bowl, combine cashew cream / mayonnaise, milk, sesame oil, maple syrup, and salt. Whisk together until smooth.
- Add broccoli and carrots to sesame oil sauce, folding to coat broccoli completely. Add salt to taste.
- Serve immediately, or cover and refrigerate until ready to serve.
