Did you have a Lite-Brite when you were a kid? I loved mine. As a young beginner creative, those blank pages were my favorite.
I just cannot wait for the summer like temperatures to return, now that we’ve had a tease of the hotness. We are expecting overcast skies and rain all week here, but in our kitchen it is bright and summery and fresh.
You know how you make something and then just cannot stop the craving? and you end up making this thing over and over and…
yeah. I mean, that never happens here either.
In the afternoons when I need something light that won’t ruin dinner, I have one of these. In the morning after tennis, I add vanilla protein to this and it is a satisfying second breakfast. I have added frozen raspberries (oh yeah) and spinach (green!) and spirulina. There are endless ways you can make this smoothie your favorite – I am sharing the base recipe that is equally good as is.
This is for someone who really loves the lemon. I really love the lemon. For less intense tart flavor, you could juice the lemon instead of adding it whole.
Refreshing lemon is packed with vitamins A, B6, C, and E, and calcium, magnesium, iron and potassium. You get your omega 3 from both the flax and spirulina. Flax brings some vitamin B1 and fiber, and spirulina also provides energy. I always need energy. The turmeric is my bright anti inflammatory boost.
Another bonus? Your hands smell like lemon all day.
The Light Bright Lemon Smoothie with Spirulina:
Light Bright Lemon Smoothie
YIELD: one smoothie
dairy, egg, soy and gluten free, vegan
1/2 cup cashew milk (So Delicious)
1 fresh lemon
1 cup vanilla yogurt (So Delicious)
1 tablespoon fresh ground flax seed
1 teaspoon turmeric
handful of ice
Pour cashew milk into blender.
Zest lemon, add to milk in blender. Peel lemon, including removing as much pith and segment ribs as possible. Remove seeds. Add lemon to blender.
Add yogurt, turmeric, ice and any other add ins you like (raspberries, vanilla protein, spinach, spirulina). Blend until smooth.
Optional – add a bit of maple syrup if you are not adding fruit or the yogurt / protein powder is not sweetened.
Now I want to play with an old Lite-Brite. It would be the perfect thing for this weather, actually…
