Cardamom Apricot Energy Bites - a super quick and easy three ingredient bite great for snacking, pre and post workout, or covered in chocolate for a decadent treat!
Fast Food Friday isn't always about big juicy awesome burgers like that one. Fast Food Friday is sometimes about exactly that - fast food. These little balls take literally minutes to make, roll, and enjoy.
I made a batch of these start to finish in the time it took my French press coffee to ... percolate? Yes, that. Sent half of them off to work with Jason, ate two with my coffee, and stored the rest in the fridge for snacks.
...and for a simple but impressive truffle (for a Halloween party, perhaps?), dip them in some melted dark chocolate:
Cardamom Apricot Energy Bites
YIELD: 20 - 25 pieces, depending on size
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
¾ cup raw cashews
1 cup dried apricots
2 - 3 teaspoons ground cardamom
2 teaspoons sea salt
1 tablespoon water
INSTRUCTIONS:
In food processor, pulse cashews to a crumb.
Add apricots, cardamom, salt, and water - process to combine.
Using hands, roll pieces of dough into one inch balls.
Store in covered container in refrigerator, up to two weeks.
