Sweet Holiday Nog Pancakes - these quick and easy pancakes are sweet and fluffy and taste like a sugar cookie! Perfect for a snow day, or any day!
Today is a snow day in Portland! Jason is working from home, Rosemary and I are bundled up in front of the heater, and we enjoyed a late brunch this morning. We started with Holiday Nog in our coffee while I impatiently stood at the window like a ding dong, waiting for snow.
Then I made Sweet Holiday Nog Pancakes.
These are sweet like a sugar cookie, with a slightly crisp edge around super fluffy insides. The key to a fluffy pancake is to just mix until combined - no over mixing. Let the batter sit for a few minutes, but not too long - I usually sift together the dry ingredients, grease the griddle, turn on the heat, then whisk wet ingredients into the dry. It gets to sit for a couple minutes as the griddle gets sufficiently hot.
Sweet Holiday Nog Pancakes
adapted from Double Rich Chocolate Pancakes
YIELD: 8-10 pancakes
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
1 ½ cups gluten free all purpose flour
3 tablespoons vegan granulated sugar
2 teaspoons baking powder
2 cups So Delicious Holiday Nog
2 tablespoons apple cider vinegar
INSTRUCTIONS:
In mixing bowl, whisk together flour, sugar, and baking powder.
Whisk in holiday nog and vinegar, stirring to combine completely.
Using a ⅓ cup measure, scoop batter onto an oiled skillet over medium low heat. Flip when pancakes bubble, cooking through on the other side (a minute or so each side).
Serve warm, top with sliced bananas and maple syrup.
Perfect for a snow day.
