Buffalo Jack Avocado Noodle Rolls - tangy spicy buffalo jackfruit rolled with creamy cool avocado and rice noodles - a fresh and flavorful lunch or snack!
Buffalo Jack Avocado Noodle Rolls are definitely a Fast Food Friday lunch for me - especially because I have a big ol' container of the buffalo jackfruit sitting in the fridge. The rest is easy - totally fast.
I mean, the rice ramen takes four minutes to cook.
Would you call these a comfort food summer roll? More of a winter roll? Salad roll with no salad? I love my summer - salad rolls, so whatever I end up calling them, I hope you love them too.
I want to stress how easy rice paper rolling is! I give specific instruction in the recipe, but really - rice paper aggravation should not keep anyone from trying. You know, like plastic wrap. *sigh*
Rice paper is much easier to deal with than plastic wrap, trust me. Plastic wrap makes me yell.
When I make salad rolls with rice paper, I first make sure I have all fillings ready to go - a rolling Mise en Place if you will. I prep a flat surface area - usually a cutting board - and I am ready. I take one rice paper, turn on the kitchen sink faucet, run the rice paper under the water for a second - both sides - and that is it. The rice paper will still be firm, but it loosens up as it sits, as you fill. By the time you are ready to roll, it is pliable but doesn't rip or stick. Easy, really.
Buffalo Jack Avocado Noodle Rolls

YIELD: 8 rolls
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
1 cake Forbidden Rice Ramen
½ of a (20 ounce) can young jackfruit in water, drained
¼ cup buffalo style hot sauce*
1 rib - stick celery, trimmed and diced fine
1 avocado, peeled, pitted, and sliced
8 rice paper wrappers
INSTRUCTIONS:
*Adjust according to heat preference
RICE PAPER HYDRATING TECHNIQUE:
Prep a large plate/surface to fill/roll wrapper (and have fillings prepped / ready). Hold wrapper under water faucet running cool water, getting both sides of wrapper wet. Remove from water and while still firm, place on plate and begin to fill – rice paper will soften as it sits, but will not be so soft that it sticks to the surface or rips when handling.
Cook rice ramen according to package instructions (four minutes). Remove from heat, drain, and set aside to cool.
Drain jack fruit, place in large bowl. Using two forks, shred jack fruit into smaller pieces (or chop with knife). Add hot sauce and celery, stirring to combine - coat completely.
Assembling rolls: Run a rice paper under water faucet. Place dampened rice paper on flat work surface. Lay slices of avocado down middle of rice paper. Top with rice noodles and buffalo jackfruit. Roll like a burrito – fold short sides over, turn and fold one long side over and roll / tuck / roll / tuck until completely enclosed. Repeat with as many Buffalo Jack Avocado Noodle Rolls as you want!
