Roasted red pepper grilled cheese
Adding roasted red peppers to grilled cheese brings a sweet, tangy flavor and another layer of texture to each bite. Use a fresh red bell pepper charred over your cooktop flame or roasted in the oven, or use jarred roasted red peppers.
Either way, I slice into bite size pieces before adding to the sandwich. If using jarred, I pat them dry with a paper towel before using.

Does vegan cheese melt?
One of my tips for making a super melty grilled cheese is using grated cheese rather than sliced. This goes for any cheese, and I definitely do this with dairy free cheese.
Yes, dairy free cheese does melt! It may not always look like it, as it sometimes stays in the shape of each grated shred.
Also, adding a cream cheese layer along with grated cheese brings a melty - creamy component to a grilled cheese sandwich.
Tips for a perfect grilled cheese
- Cook slowly, over low heat
- Use a lid to add steam (add a small amount of water to skillet before covering for more steam!)
- Cook each side of one sandwich separate, open faced

Roasted Red Pepper Grilled Cheese
This grilled cheese brings great flavors together - crisp toasted bread with gooey cheese and a slightly sweet tang of red pepper. Does vegan cheese melt? Yes!
Ingredients
- 1 teaspoon dairy free butter or olive oil
- 4 slices gluten free bread
- 4 tablespoons dairy free cream cheese
- 4 tablespoons dairy free grated cheese
- 1 large roasted red pepper*, sliced into bite size pieces
Instructions
- Spread cream cheese on one slice of bread for each sandwich.
- Divide grated cheese equally between the other slices of bread. Add roasted red pepper slices on top of grated cheese.
- Add the cream cheese bread to the top of the slice with grated cheese / peppers.
- Melt butter / oil in a skillet over medium low** heat.
- Place each sandwich on warm skillet in melted butter / oil. Cover with a lid to melt cheese as bread cooks up grilled and crispy.
- Remove from heat. Let sandwich sit for a few minutes before slicing.
Notes
*use fresh red pepper pepper roasted in oven or open flame, or use jarred roasted red peppers
**watch temperature closely and adjust so there is enough heat to melt the cheese and toast the bread without burning

Exciting about a new gym membership! Favorite cake - hmmmm. Probably strawberry shortcake. But I habe fond memories of baking yellow cakes with chocolate frosting as a kiddo with my sisters. This is totally up my alley. I love red bell peppers. I think I could have this right now! As for cakes, not a cake person really. The only cake I have found that I like is an Italian Cream Cake. That's what I used for my wedding cakes.

My favorite cake is either a golden from scratch or red velvet because they're usually so moist. I almost never eat them but they're a a great treat once in a great while.
