Peaches and Cream French Toast - a fluffy French toast with a perfectly crisp edge and a natural sweetness from super juicy end of summer peaches - this is brunch ready!
If you ask me what my favorite late summer food is?
This year I would have to say peaches.
I think I have had the best peaches of my life this summer, no lie.
Dramatic? I don't know. The peaches I have enjoyed are simply perfect. That exact right amount of natural sweet, and so juicy. This is like, one of three recipes I have bothered to make with peaches this summer, since I cannot get beyond just eating them as is.
Like, in the car on the way home from the market.
My new car may have had a few sticky spots on the steering wheel that needed cleaning last week.
French toast gets talked about here often enough, yes? You know I like it, you know I channel Grandpa Z with his fluffy salted French toast. This is the first time I made this particular idea for a custard, using a sweet combination of apple sweetened cashew cream and coconut cream - pretty darned good, but I still had to make the recipe a few times before sharing here. Oh darn.
Today for Vegan MoFo, they ask what is you favorite late summer food?
Peaches.
and French toast.
Peaches and Cream French Toast
YIELD: six - eight pieces French toast, depending on bread size
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
⅓ cup raw cashews, soaked in hot water 1 hour
⅓ cup apple juice
½ cup coconut cream
1 teaspoon vanilla paste
pinch sea salt
1-2 tablespoons vegan butter
your favorite gluten free bread
fresh peaches, pitted and sliced
INSTRUCTIONS:
Drain and rinse cashews.
In high speed blender, combine soaked cashews and apple juice. Blend on highest power until smooth. Add coconut cream, vanilla paste, and salt, blend until combined.
On large griddle over medium heat, melt butter. Dip bread into cashew coconut custard, place on griddle. Cook about two to three minutes before flipping, when just golden brown. Cook another couple few minutes on other side, until cooked through and golden brown.
Enjoy with fresh sliced peaches, powdered sugar, syrup.
I may have to test this recipe again. Just to make sure...

Peaches are without a doubt my favorite summer fruit. I just froze a whole bunch to have a taste of summer in a couple of months when I've forgotten that summer exists. I can't wait to try this.

Hmm, if I had to pick a favourite summer food, it would be so hard! I do love raspberries, but peaches and cream is such a classic pairing and placed into French toast? Amazing!
