    Nutrient dense spinach is one of my favorite vegetables to make recipes with. This leafy green is considered a superfood because it is rich in iron, protein, antioxidants, vitamins and minerals. 

    We have assembled this spinach recipe collection as inspiration to incorporate more of this leafy green into your diet.       I KNEW it was national spinach day yesterday (thanks to Janetha, of course) and am now kicking myself for not making spinach pancakes. In fact, I haven't made them in months! That needs to change asap- I LOVE those suckers!

      Aw man, I missed it! I didn't have any spinach today. I did have a HUGE portion of Brussels sprouts though, so I got my green in. Love those green pancakes!

      I'm a big spinach fan. it's one of the foods my body craves on a regular basis, so I always have it 0n-hand. and like many of these recipes, I often add spinach as a base to many meals (& smoothies!) for extra nutrients. love the stuff. 🙂
