When people ask what kind of music Jason's band plays, I usually say "math rock".
Today, I bring you "mathematical cuisine". and it is totally irrational.
Tangy, sweet and aromatic - these are my tasty tribute to Pi. I actually like the skinnier Pi better, they look more like Pi, but the fatter symbols are easier to fill with a decent amount of filling.
These tasty handhelds are super easy to make, and you only need a few ingredients...
Lavender Date Goat Cheese Pies
dairy, soy, egg and gluten free, vegan
INGREDIENTS:
7 large dates, pitted
3-4 tablespoons water
4 ounces (vegan!) goat cheese
1 ½ tablespoons culinary lavender
one recipe Easy Gluten Free Pie Crust (recipe follows)
INSTRUCTIONS:
Preheat oven to 350 °F.
In saucepan over medium heat, combine dates and water. Stir/mash until dates melt into a paste and absorb water. Remove from heat and allow to cool a bit.
To cooled dates, add goat cheese and lavender. Combine completely.
To make hand pies, or Pi: Spoon filling onto crust, leaving room at the edges. Top with another Pi shape, pinch edges to seal.
Bake at 350 °F for 14-18 minutes, or until when crust is lightly brown.
Easy Gluten Free Pie Crust
dairy, soy, egg and gluten free, vegan
makes one single crust pie, or 8 Pi
INGREDIENTS:
1 cup sweet rice flour
1 cup all purpose flour (gluten free)
½ cup cold vegan butter (Earth Balance soy free)
¼ - ½ cup cold water
INSTRUCTIONS:
Using forks or a dough cutter, combine flours and butter.
Add water one tablespoon at a time until a dough ball forms.
Knead and form a ball, wrap and refrigerate for 20 minutes. Roll on a floured surface and cut into shapes for single hand pies or form a pie crust.

these are fun, and work well if you make a "wider" Pi... the 'skinny' ones look better to me, but have little filling. I'm glad to hear they are celebrating Pi in schools, seems like something they will remember, you know?

Wow lady, you are awesome. My high school always celebrated Pi Day. You could usually get math extra credit for bringing in a pi themed dessert. Then everyone got to eat them for lunch. Of course there was never anything as amazing as these. The filling sounds divine!

I am loving this comment, because I was thinking these pies were SO pale! 😉 and trust me, I get a fair amount of not pretty pies...
right now I am using Jules Gluten Free flours, I do also love my Bob's Red Mill. The light color comes from watching like a hawk and taking them out before they brown (sometimes Jason wonders if they are completely cooked...) In the past I have used an oil or butter "wash" to get a golden hue, this time I did not.

I have never heard of Jules but from the looks of it, I am going to stocking up. Girl, these are far beyond pale. Aside from legs {and I have some pretty pale legs!} I made THE palest cookies creatures known to man. These Pi Pies are perfection.
