When people ask what kind of music Jason's band plays, I usually say "math rock".
Today, I bring you "mathematical cuisine". and it is totally irrational.
Tangy, sweet and aromatic - these are my tasty tribute to Pi. I actually like the skinnier Pi better, they look more like Pi, but the fatter symbols are easier to fill with a decent amount of filling.
These tasty handhelds are super easy to make, and you only need a few ingredients...
Lavender Date Goat Cheese Pies
dairy, soy, egg and gluten free, vegan
INGREDIENTS:
7 large dates, pitted
3-4 tablespoons water
4 ounces (vegan!) goat cheese
1 ½ tablespoons culinary lavender
one recipe Easy Gluten Free Pie Crust (recipe follows)
INSTRUCTIONS:
Preheat oven to 350 °F.
In saucepan over medium heat, combine dates and water. Stir/mash until dates melt into a paste and absorb water. Remove from heat and allow to cool a bit.
To cooled dates, add goat cheese and lavender. Combine completely.
To make hand pies, or Pi: Spoon filling onto crust, leaving room at the edges. Top with another Pi shape, pinch edges to seal.
Bake at 350 °F for 14-18 minutes, or until when crust is lightly brown.
Easy Gluten Free Pie Crust
dairy, soy, egg and gluten free, vegan
makes one single crust pie, or 8 Pi
INGREDIENTS:
1 cup sweet rice flour
1 cup all purpose flour (gluten free)
½ cup cold vegan butter (Earth Balance soy free)
¼ - ½ cup cold water
INSTRUCTIONS:
Using forks or a dough cutter, combine flours and butter.
Add water one tablespoon at a time until a dough ball forms.
Knead and form a ball, wrap and refrigerate for 20 minutes. Roll on a floured surface and cut into shapes for single hand pies or form a pie crust.

I'm excited to do this for Pi day tomorrow. Can you use brown rice to make rice flour rather if you don't have sweet rice flour?

hi Jessica! you absolutely can use brown rice flour. (I have also used just gf all purpose flour when that is all I had - it works too.) happy Pi Day!

I know, someone really needs to recreate a goat cheese flavor in a vegan cheese (I have tried!) 🙂 I have had a couple cheeses recently, but they are from a local farm I met last summer at the farmers market, and they have happy goats!
