Chocolate Chip Cookie for One
Monday afternoon on Facebook, my friend Shirley said she was thinking about making one big cookie for herself. Several people chimed in, saying that sounded good, we also wanted a cookie. Three of us made cookies. I pulled down a cereal bowl, some flour, butter, chocolate... my cookie was good.
Yesterday I made another. Actually wrote down the quantities and perfected the single serve cookie.

Single Serve Chocolate Chip Cookie
Because sometimes you just need one.
Ingredients
- ½ teaspoon flax seed, freshly ground
- 1 ½ teaspoons warm water
- 1 tablespoon butter (non dairy / margarine)
- 1 ½ tablespoons maple syrup
- ¼ cup gluten free all purpose flour
- ¼ teaspoon baking powder
- pinch sea salt
- handful dark chocolate chips
Instructions
- Preheat oven to 350 °F.
- Combine ground flax and water, set aside.
- Cream together butter and maple syrup. Add flour but do not stir.
- Mix baking powder and sea salt into flour, then fold into wet ingredients. Add flax gel and chocolate chips, combine.
- Spoon onto prepared (parchment, sprayed) baking sheet, bake at 350 °F for 10 minutes, or until cooked through.

How about that delicious looking chocolate milk? How do you make yours? Is it dairy free? I've tried making dairy free (and sugar free) chocolate milk with rice milk and other dairy free options, but it's not very nice so far. Do you have a great recipe?

I loved that you jumped right on this idea, girlie! Thanks for the mention! If I had any chocolate chips left in the house, I'd be trying your version right away. For real. 🙂 It really looks wonderful! My version was grain free and contained an excessive amount of chocolate chips. LOL, but true. It needs another tweak or two, but with no more chocolate chips that will have to wait. At least until tomorrow. 😉
So "crazy busy" has now morphed into "OMG busy"? Sigh. While I've been guilty of this, too, from time to time, I will be the first to admit that it is often a guise of busyness and usually a sign that one is not taking care of the important "stuff," sometimes deliberately loading up one's "to do" list to avoid dealing with that particular stuff. To paraphrase the old story, nobody on their deathbed ever said I wish I'd just checked off a few more things on my "OMG Crazy List." Planning is good. Scheduling is good. Having deadlines can be a godsend and a great motivator. That kind of "stress" can actually be beneficial (not all stress is bad), but the "I must do more, more, more (and I can't stop to breathe, smell the roses, pet my dog, say hi to my neighbor, etc.) and you should do more, more, more, too" line of thinking and modeling/preaching is definitely not a good thing.

I am SO guilty of not being able to say no and thinking that I can do everything. I ended up in the hospital with a suspected heart attack yesterday so life's gonna change for the old girl now. 🙂 Life will be easier.

Glad you started out with a nod to what today means. It's never far from my mind.
And--I have actually thought about this "busy busy" phenomenon quite a lot. I definitely think it's a product of social media, but I can't decide whether it's because a) being perpetually plugged in makes people feel like they constantly have to be doing something so that they can turn and share whatever that thing happens to be with everyone they've ever known, or b) whether it's always been this way but I just notice it more now because I'm constantly so plugged in too.
Either way, a cookie break might just do the trick 🙂

you make a good point - just because you CAN share anything at anytime to multiple audiences, doesn't mean you have to 🙂 and yes, I am far from perfect - I have had days where I seem to be online all day (and not necessarily 'job related').
cookies are ALWAYS good!
