Chocolate Chip Cookie for One
Monday afternoon on Facebook, my friend Shirley said she was thinking about making one big cookie for herself. Several people chimed in, saying that sounded good, we also wanted a cookie. Three of us made cookies. I pulled down a cereal bowl, some flour, butter, chocolate... my cookie was good.
Yesterday I made another. Actually wrote down the quantities and perfected the single serve cookie.

Single Serve Chocolate Chip Cookie
Because sometimes you just need one.
Ingredients
- ½ teaspoon flax seed, freshly ground
- 1 ½ teaspoons warm water
- 1 tablespoon butter (non dairy / margarine)
- 1 ½ tablespoons maple syrup
- ¼ cup gluten free all purpose flour
- ¼ teaspoon baking powder
- pinch sea salt
- handful dark chocolate chips
Instructions
- Preheat oven to 350 °F.
- Combine ground flax and water, set aside.
- Cream together butter and maple syrup. Add flour but do not stir.
- Mix baking powder and sea salt into flour, then fold into wet ingredients. Add flax gel and chocolate chips, combine.
- Spoon onto prepared (parchment, sprayed) baking sheet, bake at 350 °F for 10 minutes, or until cooked through.

A good friend of mine never understood people who claimed to be too busy...she would always reply "I'm sorry did you say you're too busy or too dizzy". And trust me, she is not someone who sits still but always finds time for anyone. On that note, I think I'll make 2 cookies and share with my active, but not busy busy friend. Thanks for the recipe!

As usual, your words ring true for me! *Look of shame*
I'm guilty of all of the above ~ to my defense, people have sought out my advice on what has 'worked for me' and I enjoy sharing that. I've found so much satisfaction from it, that I do like the idea of sharing with others, but never to the extent that I'm an expert, a professional, yadda, yadda. 🙂 I never want to be one of 'those' people who thinks their way is THE way. IMHO, information is power, and if you can help someone by sharing, good for you (Your blog has inspired me many times!) 🙂
It's good to be busy. Idle hands and all. My mentor/coach once told me we need to treat time as more of a business partner, and not an enemy. I like that thought. We *always* have enough time, we just need to learn to manage it.
Your cookie looks delicious, and cooking with flax is next on my to-learn-from-the-experts list. Not today (heatwave!), but soon.

it is good to be busy - I really believe that I get more done when I have more to do. it is all about planning and management - making good use of your time.
journeys like the one you have started have and will inspire people! what I agree with Lisa on is when people turn that into their platform, especially for profit, they are often ill-informed, still learning themselves, and giving ineffective or even dangerous advice.

Yes, I need that cookie. That's for sure! A lot of people our age pull the Im SO BUSY CRAP. Hey, I've even done it. It is annoying. I feel like it's an excuse, and if you really want to do something, you make time. Plain and simple.

I am probably guilty of freaking out over busy-ness too. and YES, you bring up ANOTHER aspect to 'busy' - using it as an excuse for NOT getting things done, NOT doing things you "say you want to do" - if it is important, you will find time!

Your cookie looks yummy. I thought I might make a version based on what I have on hand- do you think coconut oil could replace the butter? I've never actually baked with coconut oil before so I'm not sure if you have any experience.

hi Meri - while I have not used coconut oil in THIS recipe, I have successfully baked with it before - it is a straight substitution for the butter. enjoy!

I read a great article just the other day on the whole idea of busy busy busy. It's almost a bragging right anymore. We all need to stop and just slow down. Life is passing us by as we're busy busy busy not noticing.

and it is ironic that many of those "OMG busy" people are ... complaining about it on social media? and I see these people on social media a lot? some of it is taking on all the things, some might be lack of time management 😉

I was waiting to hear your update, I saw your "I'm going in" comment yesterday. *sigh* this is where I thought I might come off as a Bah Humbug, but I guess I see too many people complete a major change (in your example, weight loss) and then feel they must Teach and Preach and make it their job? I stand by my "You can be an example and an inspiration and leave it at that."

Thanks so much sweetie. 🙂 Yes, sadly Tory uses a ketogenic diet, never saw a doctor, and thinks things like apples and carrots are evil. Also very little exercise ... I'll have my review up in a few minutes ... but mostly I want to give her a hug and send her to a therapist and a nutritionist.

There is nothing glamorous about being too busy. I purposely say no to things so I don't get to that point in my life. Lots of parents tend to do this with their kids these days and it drives me crazy. Just let them play! They don't need 8 billion activities. Anyway, that's kind of a tangent.
I love this recipe. I don't know if I'd want to share, so I might have to try to double it to make two. 🙂

Ha. I just posted about stopping the glorification of busy, so I won't ramble here. But I will say that I find it annoying, as most of the "ohmygod I'm so busy" people are much busier than they are productive. I feel bad for them in a way, as they're missing out on the moments of peace and contentment that would actually be much MORE productive than constantly distracting themselves. I guess I did just ramble...
