Mac and Cheese in a Burrito
This BBQ Mac and Cheese Burrito was originally created for a fun client project early on in my blogging career. I was tasked with carb challenge, and this comfort food mashup works so well with this easy gluten free vegan BBQ sauce.
Years later, we still make this every so often, and I get looks of curious wonder whenever I describe it.

BBQ Mac and Cheese Burrito
This burrito combines creamy mac and cheese with classic burrito fillings and a sweet tangy BBQ sauce.
Ingredients
- 2 gluten free tortillas
- 1 cup Mac and Cheese
- 1 cup pinto beans
- 2 ounces vegan cheese, grated fine
- 6 leaves romaine, chopped
- 3 tablespoons BBQ sauce
Instructions
- Warm each tortilla before you fill.
- Add several tablespoons Mac and Cheese down the middle of the tortilla, followed by the beans, finely grated cheese, and a good amount of crunchy lettuce. Roll tightly.
- Top with BBQ Sauce.

This looks so good!! I fell in love with BBQ Mac & Cheese burritos at Homegrown Smoker. I've been dreaming about them ever since. Whenever I have leftover mac and cheese, I make sure to at least have 1 or 2 days of leftovers like this.
