Vegan Artichoke Shiitake Ceviche
This vegan artichoke shiitake ceviche is so fresh and full of flavor and texture. Artichoke hearts have the consistency of a traditional seafood component, and the arame is a sea vegetable which brings that savory sea flavor.
Sunday we grilled at our place, and our grill read 100 degrees prior to starting it up. Hot days require cool eats, at least for me. I had a perfect reason to make my vegan ceviche.

Jason actually described this dish as having umame. This is tangy and light, colorful and flavorful - we served it over crisp corn tortillas, tostada style.

Vegan Artichoke Shiitake Ceviche
A unique plant based version of a classic - crisp, fresh, and so flavorful! a great addition to any summer menu!
Ingredients
- 1 (12 ounce) jar marinated artichoke hearts, chopped
- ½ head cauliflower, chopped
- 1 jalapeno pepper, seeds removed, diced
- ½ pint shiitake mushrooms, diced
- 1 avocado, diced
- ½ cup raw cashews, chopped fine
- â…“ red onion, diced
- ¼ – ⅓ cup arame
- juice of 1 grapefruit
Instructions
- Chop the artichoke hearts, cauliflower, jalapeno, mushrooms, avocado, cashews, and red onion in uniform size (a small dice).
- Add all chopped ingredients to a bowl.
- Add arame and grapefruit juice, toss to combine.
- Cover and store in refrigerator to marinate, one hour.
- Serve with tortilla chips, crisp lettuce leaves or small corn tortillas.

it didn't need any oil, really! the artichokes are jarred in oil, but I didn't use any aside from what was left on them, and chopping them left much of that out too.

What a cool idea! I love cauliflower, and I bet it was awesome with the tangy grapefruit juice and that meatiness from the shiitakes (my favorite!). Can't wait to try this out.

I do love artichokes! Enjoyed some earlier this summer just boiled plain and then dipped in nooch sauce. Love the idea of this meatless Monday challenge, I wanna try! Or maybe only because I just pulled a few beets out of my garden and know next week wouldn't involve any extra grocery shopping ;D
