Baked Avocados with Mini Shiitakes

Wordless Wednesday.

I haven’t done one of these in a long while. and if you’ve been reading a long time
(I love you!), you know that I could never follow the rules anyway, I like to talk too much.

Baked Avocados with Mini Shiitake Mushrooms

I wanted to share one of my recent lunches with you, but it’s really not a recipe.
and it is Wednesday.

Plus, I could not not say something about these mini shiitake mushrooms I found! How cute are they?

All the way cute is what. I finally found a good avocado (sure hope those continue), filled it with these tiny tasty shrooms, drizzled with olive oil and baked. 15 minutes, cover with sriracha.

    Though I love avocados, for some reason I’ve never had a baked one. I just received a few in the mail from a friend in California, so I’ll have to try it out tonight!

      yes, you must do this now! a warm avocado, oh – just scooping into it, with some yum flavors stuffed inside, oh so good!

      I KNOW, I have had too many not good avocados. so nice to have some tasty ones again, I feel like I eat one a day (well, I can again now if the goodness continues!). πŸ˜€

    I love avocados and eat them all the time, but never ever thought about baking one. Wow! I am totally curious and want to do this right now. It will have to wait until later because I am not home right now.
