Secrets to a moist, fluffy cake
This banana snack cake is gluten free, and is moist and fluffy.
The light and fluffy part comes from the soda water and sifting the dry ingredients, and it is moist because of the mayonnaise.
Yep. This snack cake borrows a method from another Depression Era recipe, when mayonnaise was used in place of eggs and oil, which were often unavailable.
I have made this recipe countless times over the years, and by now I definitely have suggestions for the best vegan mayonnaise to use. Every vegan mayo I have tried works, but some have a better result in being moist but not dense.
Some vegan mayo cause the bottom third of the cake to be a bit dense or heavy - this is still delicious, but I prefer an even, fluffy consistency. This is so spongy, it really is hard to believe it is a gluten free snack cake.
My favorite vegan mayonnaise to use with this recipe are, in order:
- Sir Kensington's
- Hellman's Vegan*
- Plant Perfect
- Just Mayo
*The Hellman's I like is the brown writing with "carefully crafted" instead of the blue / green label.

How much club soda replaces one egg in baking?
¼ cup of club soda replaces one egg.
I have only done this up to ½ cup, or replacing 2 eggs. If you are veganizing a recipe that calls for more eggs, I would use a combination of egg replacers, like club soda and also an egg replacer product.
For this vegan snack cake, ¼ cup of club soda works very well.
Recipe add ins
This banana snack cake recipe is so very delicious, and we often enjoy it as is. One of my favorite ways to upgrade it from a snack to a proper dessert is to frost it with this vegan chocolate fudge frosting.
This gluten free snack cake recipe also works very well with a number of ingredients stirred in just before pouring into the baking pan. I add between ⅓ to ½ cup:
- shelled walnuts or pecans, chopped
- raisins or currants
- macadamia nuts
- mini chocolate chips / chopped chocolate
- peanut/nut butter, swirled into the top after pouring into pan
- quick oats, sprinkled on top after pouring into pan
Storage suggestion
We keep our snack cake wrapped in foil, or in an airtight glass container with a sealing lid in the refrigerator. You can also store banana snack cake in one of the same methods on the counter. Snack cake should stay fresh and fluffy for about a week, refrigerated or not.
(I generally refrigerate breads in the summertime, and leave them on the counter in the colder months.)

Banana Snack Cake
This gluten free vegan snack cake recipe is super moist and delicious. Bake it your own with our list of ingredient add ins!
Ingredients
- 3 ripe bananas, peeled
- ⅓ cup vegan granulated sugar
- ⅓ cup + 1 tablespoon vegan mayonnaise
- ¼ cup club soda
- 1 ⅓ cups gluten free all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon Himalayan salt
Instructions
- Preheat oven to 350 °F. Line an 8x8 baking dish with parchment.
- Peel the bananas and add them to a large mixing bowl. Mash bananas with a fork.
- Add sugar and mash until combined. Add mayonnaise and club soda, stirring with a spatula to combine.
- Add the flour, baking soda, and salt to a sifter / mesh strainer.
- Sift these dry ingredients into the banana mixture.
- Stir to combine. Scrape sides of bowl with spatula to combine completely. Transfer to prepared baking dish.
- Bake at 350 °F for 40 minutes, or until an inserted toothpick comes out clean.
