This delicious appetizer is a party favorite with rich layers of flavor everyone loves.
Ingredients
- Β½ cup roasted walnuts
- 4 ounces dried shiitake mushrooms or mushroom powder
- 1 tablespoon olive oil or vegetable broth
- 1 yellow onion, peeled and diced
- 3 cloves garlic, peeled and minced
- 2 stalks celery, trimmed and diced
- 1 pound cremini mushrooms, cleaned and sliced
- 3 tablespoons dry vermouth (or dry white wine)
- 2 teaspoons gluten free tamari (soy sauce if not GF)
- 2 teaspoons dried thyme
- 1 teaspoon fresh ground black pepper
- Β½ teaspoon ground fennel
- Β½ teaspoon smoked paprika
- Β½ teaspoon onion powder
Instructions
- In high speed blender or food processor, combine walnuts with mushroom powder or dried shiitake mushrooms. Blend to a fine powder and leave in blender jar.
- Peel, trim, and dice onion, garlic, and celery.
- Add olive oil or vegetable broth to a large saucepan over medium heat. Add onion, garlic, celery and fresh mushrooms.
- Sauté until onion and celery soften. Add vermouth, tamari, thyme, pepper, fennel, smoked paprika, and onion powder. Stir to combine and continue to sauté for several more minutes, until vermouth cooks down.
- Carefully transfer this sautéed mixture to the blender jar with the walnut - mushroom powder. Blend on high speed, stopping to scrape sides as needed, Blend to a smooth consistency.
- Transfer to a serving bowl and serve with toasted baguette, vegetables and crackers,

Are the potato bites supposed to be served cold or can you pipe in the walnut pate and then warm them up again in the oven?

hi Sandra, I have always served these after assembly, so they aren't really cold, just mildly warm or room temperature. I haven't baked them after, but I am sure they'd be great warmed up in the oven before serving. enjoy!

This does have soy! Tamari is made with more soybeans than ordinary soy sauce, resulting in a smoother, more balanced, and complex flavor.

ah, thank you for catching that, Lori - it was correct in the printable recipe at the end, but I neglected to remove it from the original template. we use tamari all the time (gluten free), and I do know it contains soy - my mistake leaving it on the recipe template. cheeers!

yes Jameson, good thinking! I thinned out the pate into a delicious salad dressing (coming soon!), and I have also piped it into endive leaves. a sandwich spread is just a given, right? I need to do that. π
