Herb Cheese Peppadew Sweet Peppers
(Way) back in college, I hosted a lot of dinner parties.
While I now love spicy heat of peppers, I wasn't always this way. But the peppadew - that is a sweet flavorful pepper I could always get on board with.
Back in those days, I'd make a soft spread from Boursin style cheese and cream cheese, then pipe that deliciousness into a peppadew.
So simple, so elegant, and so good!
Easy Last Minute Appetizer
I have always been all about appetizers and snacks - this is one reason I love all the food around the holidays!
If we are in town for major holidays like Thanksgiving and Christmas, I love to arrive at mom's house early. Like, in the morning. We have breakfast. We go over our food lists and schedule the day. Then we eat and cook all day! I have even shown up the day before and cooked all day then, too.
We put on all the holiday movies, eat appetizers and enjoy the day.
Many of our appetizers and snacks are simple, like these Herb Cheese Peppadew Sweet Peppers.
...and every time I make them for a party? They disappear quickly. Make a double batch.

- Arrange the peppers on a serving tray. (I sometimes take a sharp knife and carefully slice a bit off the bottom, for a flat surface that will not roll.)
- Fill a piping bag (or a plastic bag) with the cheese spread.
- Pipe cheese into each pepper. Top with parsley.
