Halloween stuffed peppers
Here we are approaching Halloween again, in my eighth year of blogging.
I continue to carve these stuffed pepper jack o lanterns each year despite 1) not having children, and 2) everyone and their dog makes them now.
Rosemary dachshund carved one of these.
Okay maybe the dog didn't carve one, but these stuffed pepper jack o lanterns are everywhere now.
Remaining true to my lifelong nature, however - I do what I want, and in October, I want stuffed pepper jack o lanterns with all the fillings.
This year, I chose a Midwest favorite - Frito pie stuffed peppers.
Everyone loves Frito Pie...
Make your favorite chili recipe, grab a bag of Fritos and carve a couple peppers - you've got a super fun and deliciously tasty Halloween night dinner!
