Winter Waldorf Salad with Walnut Mustard Dressing - a smoky, nutty finish to our wintery version of the fresh and flavorful classic has become our favorite!

I hope you all have been enjoying the holiday season, the festive arrival of winter solstice, or even just a good movie.

Jason originally called this the Fall Waldorf Salad. Then I called it the Falldorf.
But it is officially winter, and I am craving all kinds of fresh. We didn't really overdo the holiday this year, non traditional veggie sushi, travel to the snow, and a Christmas night movie with cocktails. For whatever reason, I am still craving all kinds of fresh, rather than the comfort food I am normally craving during cool winter months.
Right now in my kitchen, I have a huge bowl of grapes and green apples, and a refrigerator drawer full of greens - we have been enjoying this exact salad for several days.
Right now out my window, we have snow falling. A good day.
Winter Waldorf Salad with Walnut Mustard Dressing
YIELD: serves two large salads
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
1 recipe Walnut Mustard Dressing (recipe below)
½ bunch fresh collard greens or chard, washed
2 cups fresh baby spinach leaves, washed
1 bunch Holiday Seedless Grapes, washed
2 clementine citrus, peeled and segmented
1 Granny Smith apple, cored and cubed
⅓ cup walnut pieces
sea salt and fresh ground black pepper
INSTRUCTIONS:
Chop or rip the washed collards / chard into bite size pieces.
In large bowl containing the Walnut Mustard Dressing, add greens, spinach, grapes, clementine segments, and apple cubes. Toss to coat with dressing.
Top with walnut pieces, salt and pepper.
Walnut Mustard Dressing
YIELD: two salads
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
juice and zest of 1 large lemon
1 tablespoon maple syrup
3 tablespoons Smoky Walnut Pâté
1 tablespoon mustard
INSTRUCTIONS:
In large mixing bowl (the one you will assemble and toss the salad in), combine lemon juice, zest, and maple syrup. Whisk in Smoky Walnut Pâté and mustard.
Set aside while preparing salad ingredients. Recipe is easily doubled and stores refrigerated in a sealed jar for several days.

It is the first Christmas I spend away from snowy Switzerland, I spend it with Laura in California. Feels so weird! But well, I don't complain about the beach - the slopes will still be powdered when I get back 🙂

This would be perfect right now! I am not overly-full from Christmas dinners and such, but I can tell I am really tired lately and needing a boost from fruits and veggies. This salad looks great 🙂

LOVE that first photo! It's not snowing here. Its in the 70s and raining now. Crazy weather for Virginia in December. Anyway, I'll gladly take this salad any time, whatever you call it! 😉
