I love holiday cookies and treats!
We bring them to parties, I make them for friends and neighbors, and they are added to the gifts for all the fine folks who make deliveries to our house, nearly daily.
We have been stuck in the house for five days, since we live on a hill and it just snowed a fair amount in Portland. I have spent these snow days making all kinds of treats for my cookie boxes and plates, including this Sparkly White Chocolate Cinnamon Crunch Bark. So good.
This flavor combination has been rattling around in my head for a few months, and I have been waiting for the holidays to give it a go! The recipe uses the organic and vegan version of my childhood cereal favorite, Cinnamon Toast Crunch - it tastes exactly the same. I wanted to use my silver stars from my favorite sprinkle maker, which are perfect for the holidays. The cinnamon drizzle was a last minute addition, and I think it is a good one.

Sparkly White Chocolate Cinnamon Crunch Bark
YIELD: 12-16 pieces
dairy, egg, soy free, vegan
Line a large baking sheet with parchment. Have all ingredients ready, plus a piping bag / plastic baggie for the chocolate drizzle at the end.
Chop white chocolate. Using a double boiler / glass bowl over pot of water method, melt the white chocolate over low heat until completely smooth. Remove from heat.
Pour most of the melted chocolate onto the parchment / baking sheet, reserving about 2 tablespoons. Spread the melted chocolate into an even layer, in a rectangle shape.
Add the cinnamon sugar to the reserved melted chocolate, stir to combine. Pour into piping bag / plastic baggie. Set aside.
Sprinkle the cereal pieces and silver sprinkles over the chocolate rectangle in an even pattern, covering the entire surface. Snip tiny hole in corner of piping baggie, drizzle cinnamon white chocolate over entire chocolate rectangle. Set aside to allow bark to cool / set. Chop / break into pieces when cooled and hardened.
