    cinnamon rolls

My challenge this week was creating a vegan and gluten free cinnamon roll. While I am the baker, Jason is the rising-dough maker in our house (pizza dough!), so this was fairly new to me.

I think I am almost there.

Do you bake? What is your favorite thing to bake?

Have you had luck with yeast dough?

My favorite thing to bake is anything I can put in a muffin pan... I love the perfect portion control... for eggs, pumpkin muffins, cupcakes, any berry muffin, lentil loaf, and more.

I'm definitely more of a baker than a cook but I generally stick to un-yeasted goods. No real good reason, though. These look great!

I heart baking, and my biggest reluctance in using yeasty doughs is that it takes an age... and if there's a hiccup, you have to go back and do *hours* of work again!!

I made some GF pizza dough this afternoon---made the recipe 3 times before, and for some reason, this time it just wasn't *behaving* right. Interestingly, usually I speed up the proofing with a low oven setting, and this time I did it in the sun... but the elasticity definitely comes out of a higher proofing temp, I think. So there were tears at threats, but no dice: she just didn't want to be stretchy. I decided to go forward regardless and just hope for the best, but my baking perfectionism *definitely* woulda come to play if it were just a matter of re-mixing. Waiting through ANOTHER hour of rising, however, is out of the Q. 🙂
