Chocolate Covered Oreo Cashew Truffles
Truffles are truly one of my favorite things to make.
I cannot think of anyone who does not LOVE chocolate.

It has been a while since I made an Oreo truffle.
I have made the classic recipe that includes cream cheese. We have also enjoyed truffles with the minty Oreo, and another favorite, the vanilla Oreo.
Oh. Those were so good.
I needed an auxiliary dessert for a girls night dinner for five friends last weekend. I was running out of time and I didn't want to show up our hostess, who was making the main dessert.
Chocolate Covered Oreo Cashew Truffles it was!
So super easy, and literally three ingredients.
I mean, technically many more ingredients in those cookies - I am certainly not claimin' these are healthy.
But.
Three ingredients. Four if you're including the sprinkles.
I try to include sprinkles whenever and wherever I can.

YIELD: about 14 truffles, depending on size and how much dough you eat
dairy and egg free, vegan
INGREDIENTS:
20 classic Oreo sandwich cookies
½ cup cashew butter
semi sweet or dark chocolate, chopped
vegan gluten free sprinkles!
INSTRUCTIONS:
Line baking sheet with parchment paper. Set aside.
Place cookies in blender. Blend on high until cookies become a fine powder.
Transfer cookie powder to mixing bowl.
In small saucepan over low heat or small microwave safe bowl,melt cashew butter if needed.
Add cashew butter to cookie powder. Stir to combine completely into a "dough."
Using a spoon for uniform size, scoop dough. Using your hands, squeeze to compress dough, and roll dough into a round ball. Place on parchment lined baking sheet.
Repeat with remaining dough. Transfer cookie dough balls into refrigerator to set - overnight or at least one hour.
About one half hour before coating with chocolate, move cookie dough balls from refrigerator to freezer.
Prep work area before melting chocolate: have sprinkles ready to grab and coat immediately, especially if coating warm chocolate onto truffle balls from the freezer - *chocolate will set quickly.
(*I have also spooned a small amount of fresh melted chocolate after the fact, once main chocolate coating is set, and added sprinkles then.)
Using a double boiler, melt chocolate over low heat, stirring often. Remove from heat once completely melted and smooth.
Remove cookie dough balls from freezer. Arrange at one edge of baking sheet, to leave a large amount of space to set newly dipped truffles.
Using a fork and a spatula, dip cookie dough balls into melted chocolate, rolling to coat completely. Use a fork to lift truffle from chocolate, using spatula to remove excess chocolate from underneath fork as it drips through.
Carefully shake truffle to edge of fork, and gently deposit onto parchment lined baking sheet. Repeat with remaining truffles.
I'll take that one with the extra chocolate, please.
