Mini wedge salad
This mini chipotle wedge salad is my recreation of a childhood favorite. Growing up vegetarian in a family who enjoyed steak houses, a classic wedge salad was often my choice from the restaurant menu. Add a chive baked potato and I'm actually craving those childhood evenings out.
I still love a wedge salad, and I keep it simple. I add sliced grape tomatoes, crumble this vegan bacon on top, and finish with a ranch dressing. For this mini chipotle salad recipe I first published over a decade ago, the salad dressing has a spicy kick with this chipotle ranch dressing.
The flavors are fresh, smoky, and mildly spicy.
Chipotle ranch brings the flavor
I first made this super flavorful chipotle ranch dressing specifically for this mini wedge salad recipe, back in 2012.
This dressing can quickly be made with vegan mayo, or slightly less quickly by making a quick cashew cream. See the recipe card for both options - equally rich and tasty. The chipotle is a perfect flavor for this simple wedge salad.
The bottle in the photo above is my favorite salad dressing bottle.

me too! it's like a rice cake.. just a vehicle for good toppings, a crunchy!
spabettie says
haa, and I don't like rice cakes 😉 but yes, a crunchy vehicle for good toppings, that's why I like iceberg!
Heather (Where's the Beach) says
Ok gotta say I don't like iceberg. I always thought I hated salads b/c all I had as a kid was iceberg. But... with that sauce? Just maybe 😉
spabettie says
see? with this sauce you'd like it! 😉

Amy @Health Hungry says
YUM! I always love the look of these and think, "How simple - I should make those...what a timesaver!" The only lettuce I knew existed growing up was iceburg... so I've ignored it in adulthood. Maybe it's time to kiss and make up. 😉 Yay for the first night in a new place!!!
spabettie says
I love them - spoon the dressing over the very top, and it gets down into each layer! it IS time to kiss and make up, if only for the wedge!
and thanks, Amy! we wanted to the night we got the keys, but we were too tired, and without internet, ha!. we can go without a BED, but not without technology...

These would be the best possible thing to eat in mid-July! That dressing sounds perfect.
"Oops, I ate an entire head of lettuce!" OH WELL.
spabettie says
haa, yep - you can eat the whole thing easily! wedge salads are a perfect cool treat for summer...
Jenn says
This made me hungry! I actually prefer iceberg over romaine and mesculin salad but know it has no nutritional value so I just eat it on sandwiches. I'm going to try this!!
spabettie says
I do too - when I make an actual bowl of salad, I often add iceberg just for the crunch. it goes well with spinach, you know 😉
Tommy says
so fresh and fun!! I want to be invited to that housewarming party. have fun camping!
spabettie says
if you got the invite, will you fly out?? because you know I will...
Rhonda (@diningalone) says
iceberg is the only lettuce my husband will eat, he would totally love this.
spabettie says
well, there you go - you must make them for him, Rhonda! 😀
Richa@HobbyandMore says
i love the idea! i love lettuce too. of course it doesnt fill me up but all the crunch with the chipotle dressing. yumm!
spabettie says
yeah, if this were a "meal" salad it would need more oopmh, definitely. we got that from the pizza... 😉
jobo says
um, genius! SO delish looking! I love iceberg too, even with its bad rap 😉 camping out at the new digs, I love it!!
spabettie says
so good to hear from people who like the iceberg! 😉 we've been having fun camping, it's not too bad with the air mattress, but we sure miss that bed... it gives me motivation to finish packing so I can schedule the movers!
