Why you'll love these applesauce pancakes
These egg free applesauce pancakes were the result of a pancake craving on a Saturday morning. I wanted a quick and easy, oil free pancake batter that did not use bananas.
Another requirement for this 4 ingredient pancake recipe was regular flour and a mixing bowl, not oats blended into flour. I really wanted a super easy, one bowl pancake recipe with fluffy texture and and great flavor, and this is it.

These gluten free vegan applesauce pancakes are quick to make. This is a basic 4 ingredient pancake recipe, with additional ingredient suggestions like cinnamon, cardamom, and sea salt to enhance flavor. You can use homemade applesauce or for a quick shortcut, use one of these applesauce cups.
Honestly? If you are topping your applesauce pancakes with butter and syrup or fruit or nut butter... the basic recipe really is tasty as is.
Tips for fluffy pancakes
These applesauce pancakes are definitely fluffy and thick. You can thin them out by adding more club soda by the tablespoon, which will thin the batter and create a thinner pancake.
Using a carbonated water like club soda or seltzer adds air bubbles to the pancake batter, for a lighter, fluffy pancake.
Adding cornstarch turns flour into a cake flour, which creates a tender pancake. To make cake flour, remove 2 tablespoons from 1 cup of all purpose flour, and replace that with 2 tablespoons of cornstarch or arrowroot starch. Mix thoroughly into the remaining 14 tablespoons of all purpose flour.

Egg Free Applesauce Pancakes
These fluffy applesauce pancakes make a tasty breakfast. Banana free, gluten free 4 ingredient pancakes.
Ingredients
Basic Pancake Recipe
- 1 cup club soda
- ½ cup applesauce
- 1 cup gluten free flour (see notes)
- 1 teaspoon baking powder
Additional Spices
- ½ teaspoon cinnamon
- ½ teaspoon cardamom
- ¼ teaspoon sea salt
Instructions
- In a medium size mixing bowl, whisk together the club soda and applesauce.
- Add the flour to the mixing bowl but do not mix. Add the baking powder to the top of the flour. If using cinnamon, salt, or any other spices, add them to the top of the flour also.
- Stir the baking powder (and additional spices if using) into the flour before folding into the applesauce mixture.
- Stir into a smooth batter.
- Heat a griddle over medium heat. Add a ½ tablespoon oil to griddle.
- Add ¼ measuring cup scoops of pancake batter to the heated griddle and use the cup to spread the batter out into a circle. Leave enough room between pancakes to flip comfortably.
- When the batter begins to bubble, carefully slide spatula under pancake to see if it is ready to flip.
- Carefully flip pancakes and continue to cook until done in the middle. A thicker pancake will take longer.
