Shroom Hunter Smoky Grilled Cheese - a mushroom hunters favorite comfort food - sautéed mushrooms with smoky gouda are a perfect pairing!
Hello from record breaking sunny Portland!
We are seeing temperatures in the high 80 range - which is a stark contrast to the snow I just saw in Boulder and Denver. I experienced that two day, most flights canceled, blizzard of Colorado.
and we had a great time.
More on my trip later - I want to talk about what I made when I got home.
Before I left for Colorado, I found a new cheese I had been looking for, and I could not wait to try it!
I finally found the Follow Your Heart Smoked Gouda - and it is goo-ood. I have had this shroomy grilled cheese in my head for a while - originally wanted to call it Foragers Grilled Cheese - and decided a smoky gouda was the perfect pairing.
I once again applied Mario Batali's mushroom sautéing technique here, which always yields the best result. I could literally stand over the skillet and eat all the mushrooms...
Shroom Hunter Smoky Grilled Cheese
YIELD: two sandwiches
dairy, egg, soy and gluten free, vegan
INGREDIENTS:
2 tablespoons vegan butter, divided
½ pint shiitake mushrooms
½ pint crimini mushrooms
6 slices Smoked Gouda vegan cheese
4 slices rustic gluten free bread
INSTRUCTIONS:
Rough chop mushrooms - big slices, halves, thirds.
In a skillet over medium heat, melt one tablespoon butter. Add mushrooms and sauté without stirring for several minutes, until browned. Flip / stir and sauté for another few minutes. Remove from heat, transfer to a plate. Set aside.
Add the other tablespoon butter to the skillet, melt. For each sandwich, arrange two slices cheese on one piece of bread, one slice on the other. Place bread cheese side up, open faced, in skillet over melted butter. Cover and reduce heat to low, melting cheese.
When bread is golden brown and cheese is melted, remove from heat. Divide sautéed mushrooms between two sandwiches, arranging on one cheese bread. Cover with other slice of cheese bread, allow to 'set' for a minute.
Slice in half and enjoy!
This was a perfect late night snack after flying all afternoon.

Oh, my gosh. This looks so good. That FYH smoked gouda is the best. In general I don't really care about cheese slices. (I'm a bigger fan of the nut-based cheeses.) However, the smoked gouda is the exception. Whenever I can get my hands on it, I snatch it up.

Girl - gorgeous sammie. I can't believe you got caught in that blizzard. Sounds like you made some lemonade out of those lemons too. 🙂 Back to gouda and shrooms. I would eat those mushrooms straight from the pan too. So delicious!

Yup, that technique for cooking mushrooms is definitely the way to go. I love how they get well sauteed and not steamed when you let them brown without moving them.
