Santa Fe Taco Salad with Cool Salsa Ranch - peppery arugula and fresh Southwest flavors combine with crunchy ranch tortilla chips and a Cool Salsa Ranch for a perfectly simple and satisfying salad!
No, I am not really sharing a recipe for salad here today. Well, I suppose I am, but really? This is about the Cool Salsa Ranch.
Jason jokes about how much I love my ranch dressing. I make a new batch nearly every week, and pour it over pretty much everything. Dip everything into it. Think about dunking a straw into it. Buy chips flavored like it.
So you could say I am a ranch connoisseur. Not an incredibly lofty goal as titles go, but I'll take it. I like my ranch cool, I like my ranch thin. I like my ranch new and different each week (as long as it is still cool and thin).
Last week, I got my ranch in my salsa. No, I got my salsa in my ranch? Please tell me someone remembers those old Chocolate In My Peanut Butter Reese's commercials...
So yes, today I am not so much sharing a simple salad recipe, but really a vehicle.
A Cool Salsa Ranch vehicle.
Plus, we just returned from a vacation in Austin, Texas - I went for the third and final Vida Vegan Conference, Jason came along and we extended the trip with several days vacation - where we ate All The Tacos.
So I am still in Taco Mode. I still want to be eating All The Tacos.

That last photo... the one with the bite on the fork, oh yes!! This salad has my name all over it. And I happen to know a certain college boy who would most likely polish off an entire batch!

Sam @ PancakeWarriors says
Yes send me all of your ranch salsa dressing please! I'm usually not a fan of ranch bottled ranch dressing, it always has a processed taste to me. But this sounds amazing and I just have to try it. Thanks for sharing!
Kristina Sloggett says
I love ranch too Sam, but have never liked the bottled version... hope you enjoy!

My hubby and I had this for lunch and are in love. Yum! The ranch is amazing. Thank you for sharing!
Hannah says
There is absolutely nothing wrong with salad, especially when you can find a way to weave cool ranch flavor into it! That sounds pretty amazing, although I might just treat the dressing as a dip and go to town with some crudites and crackers, I must admit.
Heather @ FITaspire says
Yum - this sounds so delicious and filled with healthy veggies - my favorite kind of salad!

I love that so many blogs right now are sharing their own somewhat Austin inspired recipes. Truthfully, I haven't had ranch dressing since going vegan over a decade ago. I know! It's just a recipe away. I love this variation 🙂

Is that a carabiner for sriracha?? Priorities! 🙂 And a definite yes to all the tacos. This salad sounds like such a great way to extend the taco concept into absolutely everything.
Kristina Sloggett says
it IS! it's a genius thing called Sriracha 2 Go!! yep, we cannot get enough tacos - we have plans to go to our favorite taco place tomorrow, ha!
