Frosted Soft Sugar Cookies
Soft and fluffy cookies. Who doesn't like this classic cookie, right?
Jason brought a cookie home from his dentist appointment last week. An Easter cookie. A soft frosted sugar cookie, Lofthouse style.
I immediately had a craving, and looked through my old recipes from college.
and yeah - are you laughing because our dentist office gives out cookies? A couple years ago on Halloween, I tried my first Airhead candy because my dentist was raving about them. Dental job security, I guess?
So, these cookies. I veganized a recipe I used for holiday cookies in college. A friend called while I was making the first batch on Thursday afternoon, and I ended up making her a batch with the thinner frosting.
I still wanted the thicker, buttery frosting that is traditional with the Lofthouse style, so another batch was made the next day.
Originally, I just had a craving - I wasn't making these cookies for the blog at all! Then, some of the cookies I made for my friend ended up in the hands of her newly dairy free friend.
She wanted the recipe for Easter, and she ended up making the cutest egg shaped cookies! She used the thinner frosting so she could pipe it like a decorated egg - so cute!
Whether a holiday or a Thursday, use any frosting style and sprinkles combination you like! Once again, I am using my favorite bright and colorful vegan sprinkles here...
Frosted Soft Sugar Cookies Vegan Gluten Free
YIELD: 28-32 cookies, depending on size
dairy, egg, and gluten free, vegan
INGREDIENTS:
1 ¼ cups gluten free all purpose flour
½ cup brown rice flour
¼ cup cornstarch
2 teaspoons baking powder
½ teaspoon sea salt
½ cup vegan powdered sugar
½ cup vegan granulated sugar
½ cup vegan butter (Earth Balance BAKING sticks)
¼ cup aquafaba
3 tablespoons cashew milk
2 teaspoons pure vanilla extract or paste
INSTRUCTIONS:
Preheat oven to 350 °F. Line a baking sheet with parchment. Set aside.
In mixing bowl, sift together flours, cornstarch, baking powder, and salt. Set aside.
In another bowl with a hand mixer (or stand mixer), cream together powdered sugar, milk, butter, aquafaba, and vanilla.
Add dry mixture while continuing to mix, combining completely to a thick dough.
Using a scoop for uniform size, scoop onto prepared baking sheet.
Bake at 350 °F for 8-10 minutes. Cool completely before frosting.
Fluffy Sugar Cookie Frosting
dairy, egg, and gluten free, vegan
INGREDIENTS:
½ cup vegan butter (Earth Balance BAKING sticks)
2 ½ cups vegan powdered sugar
natural food coloring (1 tablespoon beet juice)
1 teaspoon pure vanilla extract or paste
vegan sprinkles
INSTRUCTIONS:
Using a stand or hand mixer, beat butter. Add powdered sugar by the cupful as you continue mixing, until all sugar is incorporated. Scrape sides of bowl with spatula as needed. Add food color and vanilla, combine.
Frost cooled cookies and add sprinkles.
Thin Sugar Cookie Frosting
dairy, egg, and gluten free, vegan
INGREDIENTS:
2 ½ cups vegan powdered sugar
2 tablespoons cashew milk
natural food coloring (beet juice)
1 teaspoon pure vanilla extract or paste
vegan sprinkles
INSTRUCTIONS:
Combine (sifted) powdered sugar, milk, food color, and vanilla. Stir until smooth.
Frost cooled cookies and add sprinkles.
Back to the dentist - ha!

Is there substitute you can recommend for the cornstarch? If so, how much would you recommend? I can’t eat corn. Thanks!

hi Brittany! you can use arrowroot, potato, or tapioca starch in place of cornstarch. in this instance, I'd use potato or tapioca - the same amount. you can also just add another 1/4 cup brown rice flour if you'd like. (this particular combination of flours is what I use to mimic a "cake flour" blend.) enjoy!

I secretly LOVE when people bring the "trashy" grocery store version of these to parties. There's some absolutely addicting about them. These look fabulous... and I love that you used aquafaba! I really want to make something with that.
