Bright Lemon Pickled Beet Hummus

or maybe by the looks of this, Valentines Day?
I do love me a love holiday. But - spring. My favorite time of year, just ahead of fall. By a tiny bit. Now that the holidays are over, I am done with cold snuggly weather and I want sunshine and fresh air.
We have had a nice tease of sunshine the last couple days. I know it is not going to last - the Portland rain is returning in a matter of days. It was just enough of a jolt to get me outside for a run, and open the windows to get fresh air inside.
...and now I am craving some fresh crunchy veggies.
We had plenty of comfort food over the holidays.
Those incredible Portobellingtons.
That pile of rich spaghetti.
and that dip.
Oh so good, and I cannot wait for the next visit of each of those dishes. At the same time, I am definitely craving fresh and crunch. Color and flavor. Bright and vibrant.

This Bright Lemon Pickled Beet Hummus recipe is basically a fuchsia fusion between my Easy Pickled Beets and Sarah's Lemon Miso Hummus. So tasty good.
(Speaking of getting out for a run, that post about Sarah's hummus is an oldie but a goodie. Nice to think back to sherpa days with my friends.)
Bright Lemon Pickled Beet Hummus
YIELD: two cups
dairy, egg, soy, oil, and gluten free, vegan
INGREDIENTS:
1 (15 ounce) can chickpeas, peeled
¼ cup aquafaba (from chickpeas
2 cloves garlic, peeled and minced
juice of 2 fresh lemons (about 6 tablespoons)
¾ - 1 cup Easy Pickled Beets
â…“ cup tahini
½ teaspoon each sea salt and black pepper
INSTRUCTIONS:
Peel chickpeas.
In food processor or blender, combine peeled chickpeas, aquafaba, garlic, and lemon juice. Process on highest speed until smooth.
Add beets. Continue to process until smooth. (Add Easy Pickled Beet liquid by the tablespoon to thin / reach desired consistency.)
Add tahini, salt and pepper. Blend until combined.
Transfer to serving bowl and garnish with chopped pickled beets.
Serve with veggies and crisps.
