Stuffed Avocados
I am in a springy good mood, which is influencing my recipes lately. Starting with this one.
Brightly flavored quinoa and creamy cool avocado - these lemon basil quinoa stuffed avocados are my latest daily lunch. At the beginning of the week, I make a big batch of this Cashew Cream Quinoa. At lunch time, all I have to do is slice an avocado and fill it! I usually warm up the quinoa before topping the avocado, but it works as a cold 'salad' too.
The quinoa also works in a wrap, rolled up with a bunch of crisp lettuce!
