it has been a while since I’ve participated in What I Ate Wednesday!
this week it will be a vegan, gluten free and raw theme, sharing all the amazing food from the Vida Vegan Conference weekend.
the Vida Vegan conference was about so much more than food, and I cannot adequately find words to describe the EPIC weekend we all shared.
that said, this was a blogger conference, and one focus we all share is food. the conference organizers did this right – the food was above and beyond spectacular!
breakfast each day – gluten free biscuits & gravy. gluten free pancakes. fresh fruit. roasted potatoes. tofu scramble. bagels & Earth Balance (butter and coconut spread – YUM!) raw chia parfait. fruit cobbler. coffee + juice bar.
chia pudding – great flavor. and sparkly.
Saturday lunch – barbecue tempeh. Gardein tenders. roasted summer vegetables (corn on the cob!). raw beet salad. pesto potato salad. raw purple cauliflower hummus. orzo salad. massaged kale salad. cole slaw. fresh vegetables. Coconut Bliss bars (chocolate and vanilla popsicle style) for dessert – YUM.

Sunday lunch – tortillas/greens. raw walnut meat (gluten and soy free). spicy Soy Curls. Upton’s Naturals chorizo. Spanish rice. Daiya pepperjack. assorted salsas. cauliflower hummus. gluten free, soy free, raw fixings.
the taco bar was by far my favorite – such great flavors and so fresh. I’m still thinking about this lunch. I took a corn tortilla and lettuces to wrap, but ended up eating most of this salad style, using the lettuces at the end for small wraps. SO good!
Metromint was always on the tables for meals and breaks. I love this water, and drink it a lot. I sounded like a spokesperson each time someone at the table would pick one up, looking at it skeptically, not wanting “flavored water”. I explained each time that no – it’s not really flavored water, but a mild cooling mint and essences of other flavors – very natural tasting. several people tried it based on my description and love it! you’re welcome, Metromint. 😉
Saturday night’s Galarama – I can’t believe I didn’t take photos. dinner included sliders (great flavor!), Thai salad rolls and raw salad wraps (my VERY favorite of the night!), pizza from Sizzle Pie (including gluten free options!), spinach artichoke bruschetta. cocktails, wine, beer. dessert was a Coconut Bliss sundae bar – with all kinds of amazing toppings, like caramel sauce. Mmm.
I did capture this LuLu*s cupcake before enjoying after lunch one day.
