Juicy Peach Mint Chia Pudding – a quick and easy, juicy sweet recipe that celebrates the freshness of the season. Great as a satisfying breakfast or snack.

I know it is only May, but the peaches I found over the weekend tasted like they were picked straight out of the middle of summer. So juicy sweet, really!

If these peaches are any indication of things to come, I have good feelings about the summer produce this year, you guys. Cannot wait to walk through the farmers markets each weekend and eat all the fresh things.

Juicy Peach Mint Chia Pudding Fresh @spabettie

I am still making chia pudding a lot lately – I have a few recipes just waiting to be shared!

This Juicy Peach Mint Chia Pudding recipe is brand new from the weekend, though – I just couldn’t wait. I hope fresh peaches like these are abundantly available so you can make this soon too.

This one has a light sweetness that I generally aim for. The sweet from the peaches is mild when blended into pudding, and serving it with extra pieces of fresh juicy peach is how I enjoyed it all weekend. The mint adds additional freshness, and the rest of the sweet comes from the dates.

Juicy Peach Mint Chia Pudding Vegan @spabettie

Juicy Peach Mint Chia Pudding

YIELD: 2-3 servings

dairy, egg, soy, oil, and gluten free, vegan

INGREDIENTS:

3 Medjool dates, pitted (or sweetener of choice)
1 cup cashew milk
3 fresh peaches, pitted and sliced
1/2 cup chia seeds
handful fresh mint leaves, chiffonaded  

INSTRUCTIONS:

In blender, combine dates and cashew milk. Blend on highest speed until smooth.

Add peach slices, blend a few seconds to break up peaches, leaving some small pieces.

Transfer to container with lid, add chia seeds and stir to combine.

Cover and refrigerate several hours to overnight. (I generally make this the night before.)

When ready to serve, chiffonade the mint and stir into pudding. Serve with additional slices of fresh peach.

    I found some really good peaches recently too! Being from Georgia, you know I love a good, juicy peach. 😉

    It’s been far too long since I’ve made chia pudding. I used to do something like a chia peach cobbler. Must try this with the dates!

    Nice! I love chia pudding. I’ve been adding a little chia pudding as a topping for my smoothie bowls lately. Yum! Will have to try this soon when the fresh peaches come in.
