    the perfect sandwich

    do you have a favorite food that you love so much that you cannot stop eating it? you always have the ingredients on hand, and you find yourself wanting this thing for breakfast, lunch, dinner?

    no? just me?

    lately all I crave are sandwiches. homemade, very basic but incredibly delicious sandwiches. and yes, I have had sandwiches for breakfast more than once this week.

    my perfect sandwich is almost always exactly the same. two pieces of bread, spread with butter, mayonnaise or mustard, topped with cheese and meat*. this is placed on a baking sheet in a 350 degree oven for 5-6 minutes, so the bread is toasty and the cheese melty. then you top one side with as much crispy crunchy iceberg lettuce as you can pile on there, sandwich the two sides together and enjoy. ooh soo good.

    *the bread is Udi's Gluten Free or New Cascadia Portland Bakery, the butter or mayo is Earth Balance, the cheese is Daiya or Galaxy Foods rice cheese slices, and the meat is tofurkey deli slices or Field Roast. it is all one hundred percent delicious.

      It's a toss-up between two, but it always starts with superyumful dense many-multigrain-filled homemade-ish bread (okay, I don't always bake it myself but the local bakery has fabulous multigrain breads). Usually sliced wide and toasted. My two faves are either a hummus-filled grilled portobello with a thick tomato slice and whatever greens are within reach, or cashew butter and fruit slices with cinnamon or apple pie spice or chai spice or whatever I want to experiment with that day. Fruit slices are experimentable too...I love kiwi slices or papaya slices or pear slices, but I'll try anything! 😉

      Your sandwich makes me hungry! Looks great! ^_^

      My favourite sandwich I could eat every day is a soft flour tortilla with cream cheese and sliced cucumbers and drizzled with a little olive oil. Yum!
