In the meantime, I am celebrating the last day of Vegan MoFo with a crazy-delicious sandwich.
This is also a tribute and spin off of my Jalapeno Popper Sandwich, which was a big hit!
It is made the exact same way:
gluten free bread
roasted red peppers
Tofutti Better Than Cream Cheese
Melt 1/2 tablespoon earth balance in pan. Spread Tofutti on one slice bread, top with red pepper slices, vegan cheese slices and the other piece of bread. Cook in melted butter until golden on both sides, and cheese is melty.
It’s a good thing I bought gym memberships for Jason and I today… because I think there will be many of these sandwiches in my future. 😉
