Lemon Caper Pasta with Goat Cheese Croutons – bright lemon and salty capers over pasta and a tangy crouton made from vegan goat cheese – simple comfort food!
Today I am sharing two of my favorite flavors – bright tangy lemon and salty capers.
I am also using my spiralizer again – zucchini as a pasta noodle is just so good. These fresh spirals grab onto whatever flavor you choose, and they are super fun to make and to eat!
This ‘pasta’ dish works warm or cool – but here’s a hint: when it is warm, these goat cheese croutons begin to soften and melt into the pasta, resulting in another layer of bold flavor. The cool dish brings a crisp crunch to the spirals, while warming softens them a bit. I love them both ways.
It also works as an entree – feel free to add a simple protein if you need it – or as a smaller side dish to begin the meal. I enjoyed a huge pile of this for dinner and it was superb!
The goat cheese croutons are fun as well – tangy little bites that pair well with the bright flavors of lemon and caper. I have already thought of a couple of other dishes I could make these for.
